Baked Mac and Cheese
-1 box whole wheat penne
– 2tbsp olive oil
-2tbsp whole wheat flour
-2 c fat free milk
– 2 and 1/2 c reduced fat cheddar cheese
– 2 heads of broccoli, cut into bit sized pieces and steamed (I cooked this w/ the pasta)
– salt and pepper
– 1/4 c whole wheat breadcrumbs
– garlic powder
1.) cook pasta according to directions, after draining rinse with cold water
2.) Heat olive oil over medium heat then add flour and whisk
3.) Whisk in the milk and bring it to a boil, let boil for about a minute and then remove from heat.
4.) Whisk in 2 and 1/2 c of reduced fat cheddar, salt, and pepper
5.) Mix the cheese sauce, pasta, and broccoli together and put in a baking pan. Top with breadcrumbs and some garlic powder.
6.) Bake at 350 degrees for about 35 minutes
The left is Andrew’s without chicken and breadcrumbs. Adding chicken was a great addition!
