Turkey Day (lots of photos!)

How was everyone’s thanksgiving?!?!

My day started with a big breakfast with Andrew.

Of course we goofed around too haha

Oatmeal pancake and LOTS of coffee!

 And then we watched the parade. Someone was VERY excited about santa and asked the whole THREE hours when Santa was going to be there haha

 After the parade, we headed to my parents and played baseball for two hours! Then it was time to make the rest of the food

 Of course while we were cooking, the guys were checking out the four wheeler haha

  We then ate A TON!

 Of course we took a lot of pictures!

  We also played the Wii and some cards. Eventually it was bedtime and bigger pants

 haha I actually did pretty good w/ the food. I ate but didnt go crazy like usual

One on One

Had a great day today! Started out w/ breakfast with Andrew before sending him off to school. I then went to help my mom (who is hosting the family for thanksgiving) get some food ready.

We made THREE pies: pumpkin, lemon and chocolate. Green beans, sweet potatoes and cucumbers. (my mouth was ALREADY ready for thanksgiving!)

Andrew got home from school, and it was time for lunch! Sweet potato fries, chicken and veggies w/ a sprinkle of parmesan. (I did have a few tootsie rolls for dessert- not paleo, but Ididn’t eat a million like I use to!)

After hanging out, it was time to clean! this house needed it! Andrew did help a lot, but then took a mini break haha. Love his funny face!

After dinner, I had yoga on the schedule! My neighbor Pam and I got a groupon and found this AWESOME yoga place. This is actually our second groupon w/ them.

Well, Pam kindof bailed. But instead of saying “ok Im going to stay home too” I left the house and got my butt to the yoga studio. And it was JUST ME and the teacher!

At first, I was like PLLEASE someone else come. And then when no one did, I just embraced the opportunity. I actually did a new pose too!

But I didn’t do it in heels! haha

Spinning and Paleo

I apologize for yesterday. I did not mean by the title, that I was making a casserole WITH a baby in it haha. Only that the casserole was for my friend who HAD a baby. hahaha. (I thought it was funny)


Today, started w/ taking andrew to school and then I went back to bed. Yep. I woke up at 4 am. WIDE AWAKE. whats up with that???

After sleeping in, I grabbed a half a banana and pb and headed to the gym for spin class!

I havent been in so long and I knew I needed someone else to kick my butt because I wasn’t feeling motivated today. And it totally work. I was a sweaty mess after 15 minutes! Seriously it was gross, and I had to run out of the gym when the hour was up so people didn’t smell me or notice my cherry face!

Next was a really long shower and my favorite breakfast in the world!

I then spent most of the day in this position. I watched a lot of Ellen and began reading this book.

(and no we havent turned the heat on. just using a space heater!)

Thanks to my awesome friend Tiffany, I am FINALLY doing something that she has been telling me for MONTHS to do. and that is reading and starting the paleo diet.

I just started the book, but basically it is about eating what our ancestors ate millions of years ago. Meats, fish, eggs, fruits, veggies, and healthy fats. No dairy

But a few weeks ago, I just started by cutting caffeine. No more diet soda! (except for a treat- like when I go out to dinner, stuff like that) I also am cutting WAY back on the sugar. I LOVE candy and sweets, so this one was really hard! I am the type that wants something sweet after a meal (who’s w/ me on that!?)

I will keep you guys updated! I actually made a Paleo dessert, that I will share with you guys this weekend!

Dinner was actually pretty good too.

Turkey burger w/ ketchup, spinach, red pepper on a arnolds thin. W/ sweet potato fries and blackberries

Even andrew liked the turkey burger! I was surprised! (and that glass of wine I didn’t drink. I wanted to, but then lost interest)

Baby Casserole

Last year, the NICU got together and made a cookbook! THere are so many recipes from beverages, soups, salads, crockpot dishes, desserts, and more!

I haven’t made a single recipe (I know the HORROR!) until now!

My friend Nicolette just had her adorable baby boy a week and a 1/2 ago, and when I went to visit I brought a new dish from the NICU cookbook. (She is one of my night friends that works w/ me)

She told me that her and her family loved it!


Chicken and Stuffing Casserole


-4 chicken breasts (I used about 10 chicken tenders)

– 2 boxes of stuffing

– butter/margarine

– can cream of chicken soup

– 1 cup milk

– 4 slices of cheese (provolone)


– Spray 13×9 pan

– Oven to 350 degrees

– Place chicken in pan

– Put slice of cheese on each piece of chicken

– Sprinkle w/ two boxes of stuffing mix

– drop a few tablespoons of butter/margarine over stuffing

– Mix cream of chicken and mix. Spread over stuffing

– COver w/ foil and bake for 30 minutes (I had to cook it longer)



Purple wedding

Last night, I attended the wedding of Nicole and Alex. I lived next door to Nicole and her family for 15 years, and we are all very close. They are like my second family.

This picture was taken at my brother’s wedding. Pam (nicole’s mom) is in the blue and is my rock. She is has been there w/ me through so much. And Olivia (nicole’s little sister) in the white is my little sister. We moved in next door when she was just born.

 I love them so much and I miss that I don’t live next door to them anymore 😦

I didn’t take many pictures at the reception. Im totally bummed about that. Im still using my mom’s camera. Maybe santa will bring me one *hint*hint* haha

And then we danced. For hours!

It was so much fun and this morning I woke up w/ a LITTLE BIT of a headache haha. But I did make it to the gym and Andrew is back from his dad’s. I really had a good weekend, and I just realized how lucky I am to have such a great group of family and friends

Pizza Swirl Bread






Pizza Swirl Bread


– 4 tbsp butter

– 1/3 c milk

-1/4 cup warm water

– 2 1/4 tsp active dry yeast

– 1 tsp sugar

– 1 large egg

 -2 1/4 c flour

– 1/2 tsp salt

– 2 tsp garlic

– 6 ounces provolone cheese, grated

– 4 ounces grated parmesan cheese

– 20-30 slices pepperoni

– 1/3 cup tomato sauce

– 1 tbsp italian seasoning


– In small sauce pan, combine milk and 2 tbsp butter over low heat. Heat till bubbles appear. then turn off

-Measure out 1/4 c of warm water and combine it w/ yeast and sugar. Let situ for 5-10 min until foamy. While dissolving tick pepperoni in microwave on papper towel for 30 seconds, remove a bit of grease. Spray 8 1/2 x 4 x 2 loaf pan

-Whisk egg w/ milk/butter mixture. In bowl, combine flour, salt. On low add milk/butter mixture, then yeast. Mix on medium till it comes together.

– remove from bowl and knead on lightly floured work space.

– Melt 2 tbsp of butter. Bruch one all over bowl, then place dough in bowl and coat with butter. cover and set in warm place for 1 hour.

-Preheat oven to 350 degrees

– After dough rises, roll into 8x 12 rectangle. Sprad on tomato sauce, garlic, provolone, pepperoni, and then parmesan and italian seasoning. Start at short end, and rol tightly into loaf. place in pan and brush w/ remaining butter and sprinkle w/ parmesan cheese.

-Bake for 45-50 minutes or top is golden brown.

Sorry I have been MIA for the past few days. I have been just feeling kindof OFF.

Lots of factors:

-Not enough sleep

-Stress at work

-Tired of dating

-Sad Andrew is going to his dad’s this weekend

-Several people asking for help w/ no “me time”

just lots of stress. so I havent been blogging. mostly because I feel my blogs have been real downers. And I think I actually “lost” one of my good blogging friends. I havent heard from her in weeks 😦

Anyway. I did make a few new recipes!

Ill post them tomorrow!

Last night I also went to dinner w/ the girls from work and to see Breaking Dawn!









Its ok that Im not 15 haha. Team jacob all the way! haha






Tonight Im going to get drinks w/ friends from highschool. Farmers market in the morning. A wedding in the afternoon/evening (which means LOTS of dancing!) And then Sunday I hope to get a lot done around the house, workout, and then Andrew will be home!! YEA!
