Paleo Pumpkin Cake

I made this and I completely forgot to share it with yoU! (my bad!)

It was my first Paleo recipe, and although its pretty good (I defiantly missed the sugar haha) But I didnt feel the need to eat and eat and eat. I stopped at one piece. And thats not usually how I roll haha.

This recipe is for muffins, but I still don’t have a muffin pan. I know. I know. Ill have to ask santa for one

Pumpkin Cake

Ingredients

  • 1½ cups flour
  • 3/4 cup canned pumpkin (or cook and puree pumpkin yourself)
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • 1½ tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1/4 cup agave nectar
  • 2 tsp peanut butter
  • chocolate chips (yes. not paleo)

Directions:

-Mix pumpkin, eggs

 

 

 

 

 

 

 

-Mix dry ingredients

 

 

 

 

 

 

– Add dry to wet ingredients.

-You can make muffins or just add to a 9×9 pan. Bake 350 for 25 minutes

  1. Looks so yummy! Did you use almond flour? Regular flour wouldn’t be paleo since paleo is grain free… There is a pumpkin e-cookbook on Civilized Caveman’s blog…I’ve made a few from there…check that out, too! Now I need to go eat breakfast…you’ve made me hungry! 😉
