Paleo Pizza Crust

Paleo Pizza Crust

Ingredients:

-1 1/4 cup flaxseed (next time I wont use as much)

-1 cup almond flour

-1 tsp sea salt

-2 tsp baking powder

– 1 tsp italian spices (add more next time)

– 1 TBS honey

 -3 large eggs

– 3 TBS olive oil

– 1/2 cup water (less next time)

– toppings of choice

Directions:

Heat oven to 425

2.) combined flaxseed, almond meal, sea salt, baking powder, and italian spices. mix

3.) Beat eggs, olive oil, honey, and water until smooth

4.) Pour liquid into dry mixture

5.) Press onto pre greased pan

6.) Bake for 15 minutes

7.) Take out and add toppings and bake for 10-15 more minutes

ENJOY!

Peanut Butter Granola

Ingredients:

-2 tbsp peanut butter

-2 tbsp honey

-1/4 tsp cinnamon

-2 cup oats

Directions:

1.) preheat oven 325

2.) Combine PB and honey and microwave for approximately 20 seconds. Stir.

3.) Sitr cinnamon w/ PB and honey

4.) Add oats and stir until oats are covered

 

 

 

 

 

 

5.) Spray cookie sheet and spread oats out

6.) Bake 7-8 minutes

7.) Let cool until crunchy!

Chocolate Protein Granola

ingredients:

-1 tbsp honey

-3 tbsp water

-1 tsp olive oil

-1/2 scoop chocolate protein powder

-2 cups old fashion oats

Directions:

1.) preheat oven to 350

2.) combine honey, water, and oil and mix.

3.) Add protein powder. Stir

4.) Add oats and mix until coated

 

 

 

 

 

 

5.) Spray cookie sheet. Spread oats

6.) Bake for 20 minutes

I hope everyone had a great Sunday!

Ours started w/ church and then Andrew had a friend over. I cleaned the bathrooms (just living the dream)

Lunch: I made the boys pizza, and then I made a pizza w/ Paleo Pizza Crust (recipe to come !)

It was pretty good. Obviously not like the boys, but still good and I was stuffed after!

We also got Andrew’s basketball hoop up! WAHOOOOOO

Maybe he will play for the NBA instead of playing Major league baseball haha

He didn’t help much, but he did make some pretty artwork on the sidewalk.

I am now watching Ellen, trying to get in a good mood. This afternoon was  alittle rough. I just need a hug. Anyway good night!

Calm Saturday

Saturday morning started w/ Andrew climbing in my bed and watching cartoons 🙂

I also called the doctor and Andrew’s 72 hr strep test was NEGATIVE wahoOOOOOOOO

Then it was time for breakfast and the gym. I didn’t have much time at the gym. But I got on the bike (my legs still kill me from my run!) and hit the weights. While working on my abs, there was this guy doing pushups like it was NOTHING. I think he might have notice me staring at him…….oh well haha

Quick shower, and then off to Andrew’s last indoor soccer game CAMPIONSHIP GAME. They have defiantly improved over the past weeks, but ended up losing 😦 They still had fun, and I had a blast catching up w/ the other mom’s

Next on the calendar, a hike w/ the cub scouts…….except it was in the 30s today. So we didn’t attend. Instead we hung out. I stayed off the computer. We played legos. I read alittle bit of my new book Fire. This is the Companion to Graceling.

I also headed into the kitchen, and made some homemade granola (two kinds!!) recipe to come soon!

We also watched the Mizzou (tigers) -KU (jayhawks) game. If you are from the Midwest, you know they don’t like eachother.

 I didn’t attend either school, but we cheer for Mizzou (although I know some pretty intense fans from both sides!)

Andrew unfortuantly, is still trying to gain all his energy back, and was exhausted! He feel asleep on my lap. It made my heart grow, and hope he will never grow up

We had an AMAZING evening of doing nothing. We haven’t had this in so long. We had hamburgers (I tried paleo hamburger buns) and we got ice cream for dessert.

Temptation Island

I am NOT talking about the reality TV show, I am talking about the NICU

Today was my first day at work after deciding what to “give up” for Lent. (although I’m really not giving up anything. Unless you count cookies, cakes, candy, and computer time.)

Anyway, first thing I walk in this morning to find donuts in the nurses lounge. I’m not a HUGE donut fan (I mean, Ill eat them! haha) but they aren’t something I crave. But at 6:30 when you are tired, you will eat anything. I ignored them.

I ate a half bagel thin, PB, and 1/2 banana before coming to work. So I didn’t NEED anything.

Breakfast came around 10am: Oatmeal, cinnamon, and banana

While eating my breakfast, someone brought in cookies. COOKIES AT 10 AM COME ON!!!! They kept staring at me. Saying “just try a little piece”. NO THANK YOU. When I was done w/ my oatmeal, I left the lounge. Putting distance between me and the cookies. It worked.

Midmorning snack: cashews

Mom update: I talked w/ her this morning and she is sounding much more alive than yesterday. it must be all the yummy things I got her! 🙂

Everyday, I have to walk by the dieticians office to get to the nurses lounge. And you know what they have, Candy. LOTS OF CANDY! I see it everytime I walk to the lounge, office, or front desk. But today, I resisted all of it.

Lunch: Mini Lasagna Cups, sweet potato fries and ketchup, and pudding cup

Snack: Apple slices (I wasn’t even THAT hungry, but I knew I needed something to get me through to the end of my shift)

Dinner: Shrimp Pasta

Before leaving work: Got a call from Andrew’s doctor at 4:55pm. When I called at 5:05, it said they had left the office. If they even tell me he is positive for strep or flu, I might scream

The Maze Runner

The Maze Runner

This book follows Thomas who wakes up in a dark lift, remembering nothing. He can remember his first name and a few basics. But nothing about his family, or what he ever did before.

He finally arrives in the maze. And is surrounded by other teenage boys. He soon finds that they are at the center of the maze and each and every person has a job. One person cooks, another takes care of the animals, and then there are the runners.

The runners job is to find the way out the maze. But there happens to be surprises in the maze that don’t  make it safe.

And then the first and only girl arrives in the lift, and things change…

I highly recommend this book. I know I am on a kick lately, first w/ The Hunger Games, next w/ Divergent.

But This book is amazing! I finished it really quickly and I can’t wait to start the next The Scorch Trials

Flu + running kicks

Good news: The little dude is feeling better, no fever, and even made it to school!

Bad news: My mom now has the FLU!!!!!

No joke. I swear, don’t come w/ in 100 miles of St Louis.

Today, I ran to get my mom’s prescription, get her zup, ice cream, popsicles, italian ice, and pudding. She looks pretty rough, so I made sure to keep my distance. And Andrew isn’t allowed over there, because he will get it even if he looks at her haha. But they will be together soon

 

Breakfast was quick and easy. Half a banana and PB, I didn’t want a full belly because I was taking my running kicks to the outdoors!!! It was in the 60s here! AMAZING!

The run was not. Apparently I was thinking it was Spring time and I didn’t bring water w/ me and the park turns the water off in the winter. (damn them) But I still finished 4 miles, while dragging my behind back to my car!

Lunch was amazing! Pizza (I ate the side w/ corn for lunch. And apples for dinner)

Moments after lunch, my sweet tooth hit. But I didn’t have much to choose from. Then I saw the dates- YUM! While watching Ellen

After getting Andrew from school, we both made some smoothies.

Mine: frozen blueberries, spinach, vanilla protein powder, yogurt, milk, and ice.

I also had a bagel thin w/ banana and PB. THen we went and played some b-ball.

After dinner, and putting the little guy to bed. Had some new carrot cake!

This is a Paleo recipe, but I promise you it is good. And I wasn’t starving for more. I had one piece, and that was all I needed!

Do you realize the difference between running on a treadmill vs. outside?
