Food for work

I always pack food for work, but hardly ever share with you guys what I bring!

When I used to live at home, my dad would say I’m packing for a whole army, or “You’re going to eat all that?!?!”. For the most part. No I don’t eat everything. But if I am hungry, I would rather have a healthy snack that I bring, then go to the hospital cafeteria or gift shop (ie. candy and sweets) I also eat breakfast, two snacks, and lunch during my 12 hour shifts.

For work today this is what I packed:

10 am Breakfast: Oatmeal, PB, and a banana

12 am Snack: Apple and almonds

2 pm Lunch: Taco salad (ground beef, lettuce, cheese, corn,and salsa) sweet potato fries, and pudding for dessert

evening snack: cucumbers

UPDATE: I didnt eat the yogurt, and did have a few starburts

Usually if I eat every few hours, and eat the most before 2, then when I get home from work at 8pm I don’t go and eat the whole refrigerator!!!! (it’s happen before… haha)

How is everyone doing?!? Sorry I didn’t post yesterday, it was CRAZY!!!

Things Andrew and I got accomplished: gym, meeting, out to lunch, doctor’s app. for Andrew, cleaned car, played in sprinkler, and watched a movie w/ some ice cream 🙂

TIred just thinking about it. haha.

Bad new is: Andrew started with the sniffles and deep cough last week. We chopped it up to allergies and the bathroom remodeling. But yesterday, we went to get it checked out (it was just lasting too long) SO he  has an ear infection, is getting his allergy medicine changed, eye drops, and nasal spray. UGGHH. not fun


We are officially our own pharmacy haha


And this is how I am spending my morning. Yep I now have the deep cough (thank you Andrew for all those kisses haha)

Easter Egg Wreath

The past week has been a little rough. Today started out with cartoons w/ Andrew, but then I went to church. A great new church with my friend Chrissy. Her son is in school with Andrew.  And while there, I started crying. No joke. I have been really stressed about a lot of things. I am still exhausted, and this weight is not coming off. I am feeling overwhelmed.

Onto happier things. I ate alot better today and I even got in a pinterest project (and much faster and easier than the bathroom idea haha)

Hangin’ w/ Drew

Happy Saturday Everyone!!!

I hope you had a good one. Mine was up and down, so I’m hitting the hay early to get a good amount of sleep, and hopefully tomorrow I feel better.

But the day ended w/ a park visit w/ Andrew to learn how to skateboard (for him haha) He actually did pretty good. We then had some dinner. I had salmon and green beans

And a HUGE dessert bar 🙂 While watching Puss and Boots. Loved the movie. Had kid humor and laughs for the adults too. Pick it up at Redbox!

St Louis Triathlon CLub

A few days ago, I went to my first meeting for the St Louis Triathlon Club. I talked about possibly joining this club before. So I contacted the group to get more information, and was invited to come to this meeting (possible new members are always welcome)


After working on the bathroom all day, I really just wanted to stay home, but decided I wanted to learn more about this group MORE than laying around in my comfy clothes 🙂

The group was absolutely amazing. I met Tara who is a member of the committee. I received A TON of information!

-There are over 250 members

-I was actually one of the young ones there!

-Each meeting they talk about a certain topic, this month was about Tri bikes and Road bikes. Why you want one or the other, how to clean them, etc.

– There is always food at the meetings (Score! haha)

– Not only do they have bike, run, and swim meet ups, but they also have social events. They have their picnic in April and everyone can bring their families

-The group has meet ups all month, with members setting some of them up. THey also have a “mentor meet up” every month. For new members to learn the ropes from older members.Love this idea!

– Not only do they compete in triathlons, but other races. And during the winter months they have a competition to see who can complete the most.  Also, they give points for certain competitions, and at the end of the year they total them, and you get a gift card to Big Shark

– They also have a swim a thlon. When you see how much you can swim in an hour. The girl that won swam 4450!!! thats crazy!!!

– Everyone was in such amazing shape. Which really motivated me to GET IT TOGTHER! haha


So I decided to sign up for the group. I dont know how often I will be able to attend, but I am going to try my best. They also have meet ups during the day during the week. This will work well for me so I don’t have to leave Andrew, I can just go when he is at school.

But I will keep you guys updated!

Time to bring in the big guns

Yesterday was day two of tearing the bathroom apart demolition. I spent most of my day covered in dust (no those are just extremely white legs haha)

But I look pretty good in my yellow googles 🙂

I just noticed, My thumb looks like a beat it with a hammer!!! Ok. I might have hit it a few times…….

We made a lot of progress yesterday

 Day three, we have a new tool to help us! My dad used the “mini” jackhammer (that weighed 11 lbs!!!)

We got ALL the walls taken down. The floor tile. and the concrete underneath.

I was  either cleaning, or taking heavy crap stuff to the dumpster. There is dust everywhere!!!!!

This is the kitchen fan!

Luckily, my parents had us over for dinner and dessert 🙂

-I actually like things more in their place than completely clean.

Lab results: time to get some sun

So the MILLION tests are back, and everything was normal but my vitamin D. Which actually really surprised me.

I did a little research….

vitamin D is a fat soluble vitamin that helps absorb calcium and phosphorus. It also helps regulate hormones, reduce inflammation, and function of the nervous system and immune system.

Absorbed from the sun, or in foods (milk, fish, eggs, and meat)

Normal values are 30-100. mine was 14!

Low level symptoms can include: depression and fatigue, weakness, backache, muscle cramps, high blood pressure, heart condition, and asthma

Causes of low levels: body doesn’t absorb it (crohn’s diesese, cystic fibrosis, celiac disease), obese, kidneys can’t convert it, dark skin, limited sun exposure, low fat diet, older age,

Untreated can lead to: broken bones, rickets (children), osteoporosis (adults), certain cancers, and cardiovascular diseases.

The interesting things for me would be that I eat/drink quite a bit that contains vit D. But, I do know that I have some of the symptoms (and all of this information was just compiled from different medical websites)

plan is for me: take a vitamin D supplement. One time a week. For 12 weeks. and then I will get retested.

My next question will be, WHY am I vitamin D deficient.

taking down more walls

Today was a whirlwind.

Breakfast started w/ eggs, pb, and banana

I then grabbed a gas station coffee and headed to my “home away from home” Home Depot.

I got some good stuff BECAUUUUSSSSEE I have decided to redo the bathroom on the first floor. Or as we like to call it “The pepto bathroom”

At first, we were just going to put in the new sink, paint the cabinet, get some new fixtures and light, and a new lid for the toilet.

WELLLLLLLLLLL then I found myself looking at Pinterest and it all went to hell down the drain from there.

I found this bathroom which I really LOVED. And I thought. how easy- right?!?!?! WRONG!!!!

because everytime I want to work on a project, it SOMEHOW involves taking down walls. Why oh why do I decide to work on my house. I really just need to stop haha.

I was really excited to get started on my own. (dont mind the hair and how extremely tired I look!)

I  removed all the towel racks (there were THREE!), put in new door handles, painted the cabinet, and spray painted the mirror.

They will need another coat of paint, so I started on getting the tile off the walls. which happen to be CEMENTED to the plaster.

 FABULOUS! (remember the kitchen!!!)

I was really bummed because I like starting a project and see results, or at least progress.

Anyway, the damage has begun. The tile is going to have to be CUT OUT tomorrow. It is not going to be an easy or fast task AT ALL. Luckily, my handyman brother and his assistant my dad are coming over to work with me. I love them 🙂

Lunch wasn’t till 1, and it was a simple turkey, lettuce, and tomato sandwich, with a side of apple and colby cheese. Nothing fancy.

Dinner was easy as well, since my kitchen is housing all the stuff to work on the bathroom. I made a turkey burger, and had a side of grapes and corn on the cob. Dessert was frozen yogurt w/ fiber one cereal.

Lab Update: I still don’t have the results back from Friday. (I hate when it takes so long on the weekends but it is what it is) Luckily, tomorrow I am calling the office, they said they should have them by then. I am still having really weird symptoms……

Oatmeal Pecan Cookies

My grandpa turned 85 this week! I wanted to make him so cookies. I saw pecans, oats, and brown sugar and I was sold. They were delicious! (they are also a weight watchers recipe. SCORE)

Oatmeal Pecan Lace Cookies

Points: 2


-1 1/4 c rolled oats

-1/2 c brown sugar, packed

-1 tsp baking powder

-1/2 chopped pecans

-1/8tsp table salt

-1/3 c butter, melted

– 1 large egg

-1/2 tsp vanilla


1.) preheat oven to 350 and cover w/ parchment paper (I forgot this step and it turned into granola)

2.) Mix oats, sugar, baking powder, pecans, and salt

3.) add butter, egg, and vanilla to oat mixture. mix well

4.) drop tsp of batter onto cookie sheets and flatten each out

5.) Bake until edges turn golden 8-12 minutes. let stand for 2 minutes before removing.

Yields 2 cookies per serving

-1/2 cup oats

-1 egg

-1 tsp cinnamon

-1 tsp baking powder

-1/4 cup of milk


1.) Mix all ingriedents in a bowl

2.) Heat skillet and spray w/ cooking spray

3.) Spread ingriedents onto  pan in shape of pancake.

4.) Flip

5.) add toppings! I love PB, banana, and agave nectar. And you can make lots of designs w/ it!
