Almond Crusted Salmon

makes dinner for 2

 

 

 

 

 

 

Ingredients:

-3/4 lb salmon fillet

-1/2 cup almond meal

– 1/2 tsp ground coriander

– 1/2 tsp ground  cumin ( I didnt have this)

– juice of 1 lemon (I used lemon juice)

– sea salt and black pepper

Instructions:

1.) Preheat oven to 350 degrees

2.) Combine almon meal, coriander, and cumin

3.) Sprinkle Salmon fillet w/ lemon, salt, and pepper

4.) Coat fillet w/ almon meal mixture

5.) Place skin down on broiler pan

6.) Bake 12-15 minutes or until flakes easily (I had to cook it longer)
