Sweet Potato Stew

This past week, I have been trying to plan dinners. Usually, I go and grab stuff from the store (always from my list) but then 4pm rolls around, and I’m at a lose of what to make. Then we end up making/buying food that isn’t healthy, or that we didn’t need to buy since we have food in the frig!

I had a craving for stew. My grandma has the most amazing stew recipes. I wanted to use sweet potatoes, so I did a little searching and found this recipe. But I actually didn’t follow it. I just through everything together!

Ingredients:

-1 lb stew meat

-3 tbs flour

-salt and pepper

-2 cups small carrots

-1  cup frozen peas

-1 can fresh green beans

-2 sweet potatoes, cut in cubes

Directions:

1.) Cut stew meat into small cubes

2.) Flour meat, and then heat large pot with olive oil.

3.) Brown meat in hot oil.

4.) After browns, add carrots, sweet potatoes, green beans, peas, and I ended up adding corn too. Cover with water

5.) Simmer for an hour and a half

6.) ENJOY!

Naps are a life saver

I hope everyone is having a great start to their week. My tuesday started by walking Andrew to school, and then I headed back to bed. The past week of workouts, and late night talks with Mr Flowers, I haven’t been sleeping at all how I should. I know that when I don’t get sleep, I started eating junk, and then I don’t have the energy to workout.

Luckily, after my short nap, I hit the road for a 12 mile bike ride.

It is still incridibly hot and humid, but I got the job done.

   

I am also addicted to this book. I can’t put it down! I highly recommend it!

Andrew also has been obssessed with his new spinjitzu toys. (thanks ya ya! haha)

I also made stew for dinner, it was amazing! Recipe soon!

Nesting, empty nesting, or just organizing

No, I am NOT nesting. no baby on the way for me. And Andrew hasn’t grown up that quick to make it an empty nest. But I was on a cleaning/organizing rampage today! And if I would have started earlier, WHO KNOWS WHAT Would HAVE  HAPPENED!

First, I sent to Andrew with a hidden note in his lunch

And ice coffee for me ( I think that is where I got the energy for the cleaning spree)

It all started with the kitchen. The cabinet/food pantry was getting out of control. 

I couldn’t find anything!

First, I cleaned out the cabinet of everything. Wiped all the shelves.

And then reorganized with black containers I already had.

TA DA!

The Second organization task was easy. The multi-disciplinary drawer

After a little moving around

And then the third, and monster of a task. The hall closet. With every leftover, rejected thing that wouldn’t fit in the kitchen

What a nightmare! But I am loving it now!

I have everything in its place. At one time, I couldn’t sleep unless everything was picked up off the floor and put away. I guess in case of a fire?!?!? !haha who knows!

Mr Flower’s visit

In May, Mr Flowers and I started talking. (and by talking I mean facebook messages and texts) Fast forward to July, where phone calls began, and he was going to come and visit!  (man was I nervous!) But things fell through, when his uncle passed away the night before his visit.

We rescheduled for August, and again. ….Nervous. haha

Mr Flowers arrived the day after my hornet stings…..

~Friday~

Mr Flowers (or T that I call him on the good o’ blog) brought his twin 4 year old girls with him. We were treating the first get together like friends. We met at the park by my house. I made peanut butter and jelly sandwiches (I was shaking the entire time I was making the sandwiches haha)

At the park, I was greeted with a hug, and shy hellos from the girls. Then the kids took off, and T and I headed to the picnic tables. For about 5 minutes, I could tell we were both a little nervous. But then we got to talking, just like we have the past 3 months, and it was like we had been friends forever

After running around, Andrew and I took them to Ted Drewes! You can’t come to St Louis, and not get custard!

We ate on the  patio, and then the three kiddos colored and decorated paper, and before we knew it, it was 9pm and way past everyone’s bed time.  With a hug goodbye, they were off to their hotel

~Saturday morning~

I woke up bright and early, to a text from T.  They would be ready to go to the zoo in 15 minutes, whoops. Better go get Andrew up! haha.

While we were getting ready, T and the girls ran to the gas station to get drinks and snacks. I was impressed!

The zoo was an adventure, but the kids loved it! I was glad to show them a great part of the city.

Then it was time for pizza and little relaxing.  Our mutual friend, Chrissy, had a birthday party for her son, and we all went to celebrate.

At the party, it never felt forced or uncomfortable with T and his girls. It seemed natural. Of course the other moms/friends were there asking who he was. haha. They even commented that it didn’t seem like our “first meeting”. I have to agree.

The only bad news: we didn’t take one picture together. And I didn’t take ONE PICTURE! WHO AM I!??!!? haha

Who knows what the weeks/months/years will bring, but I know, I can’t wait to find out.

Two times in one day

The weekend started nice and early for me and Andrew. 6:45 to be exact! (andrew it’s saturday!!!) haha

Andrew went to his dad’s today. And after 15 minutes, I was bored  and a little lost. So I headed out for a bike ride!!!

I rode about 12 miles on one of my favorite trails, Grants trail. It is a must if you live in St Louis.

After that, my cousins and I headed to the pool. And before I laid out to get some much needed vitamin D, I swam a few laps.

I didn’t want to swim a specific distance, I just swam. I told myself for 15 minutes. It felt great, but I am definitely REALLY slow.

Tomorrow, I hope it really isn’t raining and cloudy like they say so I can go for a run 🙂

As the years pass….

With the first week of second grade officially to a close. I thought I would just show pictures of Andrew over the past few years of going to school. Just imagine the pictures for 8th grade, highschool, and college!!! Ok. I need to lie down haha

Holy Headache

The past few days have been EXTREMELY frustrating! My computer totally crashed! The only thing I could do was start the darn thing. Apparently I got this f’in major virus. Thanks computer geeks!

Deep breath. Well anyway, I have been doing this……

Bought a new external hard drive. Attempted to move all my files to it (who knows if they are all there). And then reload everything back on the computer, after wiping it out. (I think I need a new computer. AHH!)

 

OK. Well the happy news is, a few days ago I did get out and run! Like, OUTSIDE!!! I know, it shocked me too.

 

Since I am running this full marathon, I haven’t been able to train with Andrew at home. Now that he is in school, I can hopefully turn things around.

I dusted off my old running shoes….

And headed out for 3.3miles. It started out great and then the sun came out (and well, we just don’t get along. haha) I was one red, hot, and sweaty mess. But at least I did it! And it didn’t feel bad all

That night, my cousin called me to go to yoga in the park. I was all for it!!! It was perfect and hard! Just what I needed. I am so glad we went. This weekend, I plan to run while Andrew is at his dad’s.

Time to start second grade

Today, the alarm went off at 6:30. It was time to get the little rascal out of bed (and me too) for his first day of 2nd grade.

I know that this summer has been hard, with the horrible heat, we really didn’t do much except head for the pool or play with legos. And I know Andrew was happy to see all his friends again.

The day started with breakfast, and getting dressed. All occurred with little fuss, but lots of eye rubs. We were both tired.

And then the photo shoot began!

It was alittle hard to leave. I will definitely miss him (and today was only 4hrs haha)

For me, it is always so hard to be away from Andrew. First, he is my little buddy. And to not be with him, or to be able to share his day together, never gets easier. But I know that he is having a great experience with all his friends. Even his best friend will be in his class! WAHOO!

Question for you:

– Did you have any traditions for your first day of school?

My brothers and I always had to stand in the same spot outside our house each year, so we (my mom) could see how much we changed. We also walked with about 10 other kids about a mile to school. It was a great way to wake up in the morning ( I didn’t always think that haha)

Egg Sausage Muffins

You must try these ASAP! Not only are they super easy, but you can store them in a container for 3-4 days in the refrigerator! I think I will be doing this when I work several days in a row. Just pop in the microwave for 20 seconds and off you go!

Egg Sausage Muffins

Ingredients:

-2 mild chicken sausages

-1/4 c red bell pepper, diced

-1/4 c carrots, grated

– 1/2 cup fresh spinach, chopped (i didnt have any)

– 2-3 tbs fresh basil, diced

– 1/2 tsp sea salt

– 1/4 tsp ground pepper

– 10-12 omega 3 eggs (I used 10)

Directions:

-Preheat oven to 375 degrees

-In skillet,  cook sausage until no longer pink

-In a medium bowl, combined sausage, pepper, carrots, spinach and basil.

-In a large bowl, whisk eggs, salt, and pepper, Add egg mixture to sausage and veggie mixture

-Pour eggs into muffin pan. Don’t fill to the rim.

-Bake for 20-25 minutes, or until eggs are set in the middle

 

-Makes about 12-16 muffins. You can store itin the refrigerator  for 3-4 days in airtight container!
