Egg Sausage Muffins

You must try these ASAP! Not only are they super easy, but you can store them in a container for 3-4 days in the refrigerator! I think I will be doing this when I work several days in a row. Just pop in the microwave for 20 seconds and off you go!

Egg Sausage Muffins

-2 mild chicken sausages

-1/4 c red bell pepper, diced

-1/4 c carrots, grated

– 1/2 cup fresh spinach, chopped (i didnt have any)

– 2-3 tbs fresh basil, diced

– 1/2 tsp sea salt

– 1/4 tsp ground pepper

– 10-12 omega 3 eggs (I used 10)


-Preheat oven to 375 degrees

-In skillet,  cook sausage until no longer pink

-In a medium bowl, combined sausage, pepper, carrots, spinach and basil.

-In a large bowl, whisk eggs, salt, and pepper, Add egg mixture to sausage and veggie mixture

-Pour eggs into muffin pan. Don’t fill to the rim.

-Bake for 20-25 minutes, or until eggs are set in the middle


-Makes about 12-16 muffins. You can store itin the refrigerator  for 3-4 days in airtight container!
