Hiding veggies

After yesterdays breakdown, and pick me up, I also made a decision to buy myself flowers.


I know this isn’t a big deal for some, but this made me happy. And sometimes it is the little things


I also found a way to hid some veggies. Bring in the meatballs


Andrew would say that he HATTTTEEESSSSSSSS spinach. Little does he know that I chopped it up, and stuck it in the sauce


And he ate all of it!

My favorite way to add veggies, is the black bean brownies. YUM!

Time for some energy

Holy Moly. What a day. I had a bit of a revelation.

Yesterday, I had a sugar overload. I could NOT stop eating candy at work, and then I had the crash. Then I felt bad. Then I cried myself to sleep. Ok. I didn’t do that, but it made me realize something. I want to eat foods that give me ENERGY!


When I got up today, my goal was to eat healthy, not have the afternoon crash, and not get cranky with Andrew

Breakfast: 2 eggs, sausage, and paleo pancakes

Then I went crazy. Laundry, dishes, cleaned the kitchen and bathroom, and workout class at the gym. ALL BEFORE NOON!

The rest of the day, before I ate something, I said “Is this going to give me energy? or no?”

I went shopping, and made a green smoothie and brought snacks for the trip haha


Lunch I tried to recreate my Fitz’s Burger.

Restaurant Review: Fitz’s Rootbeer

Yesterday, Andrew and I went to lunch at Fitz’s rootbeer restaurant here in St Louis

It is apart of The Loop and VERY popular. Sadly, I have never been there before, but I will definitely be returning!


We met with my sister in law, nephew, future sister in law, and my mom. A ladies and kids lunch out.

We had LOTS to talk about and ending up being there about three hours!

Andrew of course got toasted ravoli and french fries


While, I tried the sunshine burger which is a Bottler’s Burger topped with a fresh fried egg, Applewood smoked bacon strips and Pepper Jack cheese served between grilled Texas Toast.


AMAZING! I ate everything but half the fries, and the bread. Then Andrew and I split a Ghostbusters Rootbeer float which is Fitzโ€™s Draft Root Beer topped with vanilla ice cream, genuine marshmallow fluff, Hershey’s chocolate sauce, whipped cream and a cherry on top.

Jam Packed Sunday

Another on the go Sunday, with only a few quiet moments in between. My calendar is jam packed! (just like mardi gras weekend)


First, I started out with a ten minute workout. I have been doing HORRIBLE in the food department (since the flu of ’13) and workouts have been none (since the repeat flu of ’13)


Today was going to start off different, and I had ten minutes to spare

Then it was breakfast time!


Eggs, pancakes, and sausage (but I didn’t eat the sausage) I think I need more color in my breakfast……

Andrew and I then headed off to church and I meet some of the members! More on this later…

THEN I GOT THE MOST AMAZING!!!!! NEWS! My friend Chrissy is getting married!!!!!!!!!!!!!!!!!!!!!!!!!!!!! She called to let us know that Derek proposed last night! I cried, laughed, and smiled the whole way home. Just thinking about it makes me grin ๐Ÿ™‚

Next. Lunch because Andrew and I don’t skip a meal haha.


The rest of the day does not include many pictures. Andrew had a basketball game, and then Andrew and I drove over to babysit fourย  kiddos along with my friend Shannon (and by Andrew babysitting, I mean he helped throw toys, and eat three bags of popcorn. hahaha)


Leaving the house at 8:30, and not getting home to 8pm was a bit of a day. But all of it was amazing, and it went by so fast! (I just wish I could stay in my pjs through it all haha)

Weekend Breakfast

This breakfast was AMAZING and the pancakes were the hit of the whole thing. YOU. MUST. TRY. THESE!

I used my smart stick that I got for Christmas. I didn’t want to get out the BIG food processor.


It definitely worked!

After mixing, it was time to start cooking!


Like I said, You have to try them!


I found the recipe here, but of course made a few changes ๐Ÿ™‚


  • 2 cup almond flour
  • 1 banana
  • 4 eggs
  • 2/3 cup almond milk
  • 1 tsp baking soda
  • pinch of salt
  • 2tbsp coconut oil


1.) Mix flour, banana, eggs, and milk.

2.) Add baking soda, and salt.

3.) Heat skillet with coconut oil, and pour batter

4.) Flip then enjoy!

The stomach bug has officially struckย  again. First me, then my dad, and now Andrew. Last night was ROUGH. He was up every 20 minutes in the bathroom. I think we had one 2 hour stretch and that was it. I was exhausted!

I headed to target to get 7up, yogurt, ice cream, raisin bread, and gatorade. (all the things needed for tummy issues! haha) Thank goodness there is a starbucks IN target!

Since 6am, Andrew has been feeling MUCH better. Thankfully because I had to QUICKLY clean the house for a 9am appointment to get my house reappraised.


Not too shabby.

There is a big snow/ice storm here, so Andrew’s school has been called off.


So we are watching cartoons and relaxing. While I catch up, and get some laughs from facebook


And take lots of pictures of the storm

Randoms of the 3 day weekend

This past few days have been a bit of a rollercoaster. I finally started feeling better!! wahoo!!

Andrew was off school on Monday, so I headed to the movies with Chrissy and her son. We saw Wreck it Ralph

It was pretty cute. Even Chrissy and I were quoting the movie after haha


Today, I finally started going through Mr Flower’s old things. I still have Christmas gifts, Cardinals t-shirts (I bought for when they move here), and other odds and ends.

I have been doing pretty good considering (but thank goodness for Chrissy talking, texting, and emaling with me haha)

After getting rid of a few things, I went to return his coat that I bought him. The lady asked if there was a defect. I said “No. It just didn’t work out”. I started tearing up. Well, that lady won’t ever ask that again haha


I also knew I needed to start eating better, and working out. It has been awhile (especially after the tummy issue) muscle works was on the calendar and I love this class. It helps me work on strength training.

Id love to go on a run with this guy๐Ÿ˜‰

Eating was a little better today. But I did eat chicken at lunch, and my stomach was growling at me again! Taking one day a time ๐Ÿ™‚

Baked Chicken Wings

After the sinful crescent rolls, and lost of carbs while being sick, I decided I need to eat “real” food. I found this!


Crispy Baked Chicken Wings


-2lbs chicken wing


-3tbsp hot sauce

-2 tbsp butter


1.) Preheat oven to 450 degrees

2.) Boil a large pot on the stove. Season with salt

3.) Boil chicken for 7-8 min (I had to longer because mine were frozen). Remove to rack

4.) Place chicken on sheet and back for 30 min on one side, flip, 10 min on the other

5.) In a small sauce pan, heat hot sauce and butter. Toss with wings and serve!

Sinful Crescent Rolls

This week, my best friend has been carbs. My stomach wasn’t tolerating anything else. (today I finally tried salad!! My first “real” meal since Thursday- WAHOOO! And then my stomach decided to growl at me for hours)

So as a result, I dug in the back of the frig, and found these bad boys and used my handy dandy Pinterest
