Two different Elves

I hope everyone is having a great Black Friday/rest day from work. I unfortunately, had to work today, but I was able to get a few deals at Target last night. (now I am beat. how do people shop for HOURRSSSS haha)

The day started with a trip from Justin.


Our Elf is back and ready to go. Andrew was reading the book he comes with each year.


I wanted to pass along this letter that I used to print from Justin. All I did was copy and paste a square over their names, and put Andrew on the top, and Justin on the bottom. Super easy!

I think Justin defiantly starts the Christmas Season. My parents and Andrew also got the tree today, and this week we are going to put up decorations! YEA for Christmas YEA for being off work  haha


Elf 4 Health Challenge: Track water intake


Today was no problem. I drink TONS of water at work (unless I have a sick kiddo) and I could tell this morning that I needed the water. I didn’t go crazy on the food yesterday, but with the food and not a lot of sleep, my body wasn’t feeling the best. So lots of H2O:

Sweet Potato Casserole

I hope everyone is having a great Thanksgiving. I will be sharing the day with my NICU family, and then heading home to see some of the family. Each year we all bring in something to share together and I wrote down sweet potatoes 🙂


Sweet Potato Casserole


Sweet Potatoes                                                                                               
      4 large sweet potatoes
      ½ cup canned coconut milk
      1 Tbsp. coconut oil
      1-2 Tbsp. maple syrup
      1 tsp cinnamon
      ½ tsp nutmeg
      juice of half an orange
Pecan Topping
¾ cup chopped raw pecans
1 tsp cinnamon
1 Tbsp maple syrup
1 tsp melted coconut oil
1.) Bowl large pot of water. Preheat oven to 350 degrees. While the water boils, peel and dice potatoes into chunks.
2.) Place sweet potatoes in boiling water, and boil till you can stick a fork in them
3.) Drain water. Place rest of ingredients in pot with potatoes. Blend with hand mixer.
4.) Place in oven safe dish, then top with pecan topping.

UPDATE: After celebrating with my NICU, I have to say this sweet potatoes are AWESOME!!!!!!! I also ended up drizzling grass fed butter on top, I think it was the best part!

What I ate Wednesday + new workout

Today is another What I Ate Wednesday, thanks to Peas and Crayons!

For breakfast, I went back to the basics. Eggs, peppers, and bacon. YUM


And of course coffee

Then it was time to workout and then trader joe’s


I picked up my twin neice and nephew. So by the time it was lunch I was STARVING!

So lunch was apple pork tenderloin that was made yesterday.


Then I had a protein pumpkin cake for dessert.


Dinner was not exciting, meatball and cauliflower mashed potatoes


ELF 4 HEALTH: try a new workout

I went looking for a new workout on my pinterest board, and found lots of good ones, but all I wanted to do was go to spin class. Which of course, is not new for me. So I headed to the gym, and to my amazement the spin class was full! Fate. I think so. haha. So instead I did 35 min on the bike, and this workout

It’s Beginning to look a lot like Christmas

Andrew and I finally had time to sit down and work on his Christmas list. We filled it out at Mr Lucky’s this past Sunday, and thought of a few things to put down. Andrew came right home, and we got stickers, markers, and construction paper. I think it turned out pretty cute!


Staying in the Christmas spirit, I found this list of Christmas movies that we can start looking for! This saves a lot of time!

(and I MIGHTTTT have my DVR ready haha)


Day 2 Elf 4 Health

Today was a day I was looking forward to! There are so many emails that I get, that IMMEDIATELY get put in the trash. So today it was perfect! I think I even started on Monday 🙂

Some rejects:

  • many blogs that are not paleo and I don’t enjoy reading. I read A LOT of blogs that are not paleo, because I love following along in their journey. But most of those blogs are the ones I found right away, and are now cyber friends with them (that doesn’t sound creepy at all haha)
  • kohl’s, hobby lobby, and to name a few. sorry, I can’t have you cluttering my inbox anymore
  • eat this, not that. I can’t remember the last time I actually read this.

Overall I think I unsubscribed to about 50 emails! Thats a lot of uncluttering!!!

Mom and me + elf 4 health

Today, I start the Elf4Health challenge which runs from 11/25-12/22. Along the way, you  gain an elf friend for 2 weeks, and then switch up and get a new elf for the last 2 weeks. Their are daily challenges, the support of a fellow elf, AND prizes along the way! I know I mentioned it was free. (and you can still sign up for the last two weeks if you are looking for some challenges and accountability!)

Today is GO MEATLESS. Trying this while on the paleo diet has been a bit difficult, but I am trying to get in my protein in other ways!

Tomorrow is unsubscribe to unwanted junk mail. I am really excited about his! Cleaning things up is a favorite “hobby” of mine (says only type A personalities haha)

I plan to keep you guys updated along the way. And you guys are welcome to keep me on track as well 🙂


If we rewind to Sunday, you will see a fun filled Andrew and mommy day. It started with church (and starbucks!)

We then drove out to sky zone again. I guess we are hooked!

Andrew wanted to just jump by himself (which he later regretted when he asked me repeatedly to join him). Afterwards we went looking for lunch. I wanted to eat a new place and not a fast food joint.


This led us to a bar and grill called Mr Lucky’s. Unfortunately, I would not recommend this place for future visits. I think it is a great place for buddies to meet for a few beers and to watch the twenty TVs that they have. It was smoky and a little outdated. The food was typical bar food (but not that impressive) BUT our waitress was EXTREMELY nice.

So a small bust for finding a new place, but at least we tried!

The rest of the day was spent lounging at home and watching Too Cute. Still not a lot of house work getting done, but what ya gonna do haha

Weekly Workouts

I was feeling great this week! The workouts were tough and I lost 2lbs! But I know that the workouts were only a part of it, it was the eats. I have been tracking my carbs on and it makes a HUGE difference.

Sunday: Jumping at sky zone 🙂

Monday: 12 hour shift + 40 min bike

Tuesday: 12 hr shift

Wednesday: 35min ellpitical + arm workout

Thursday: 60 min kickboxing class (I was a red sweaty mess~!)

Friday: 12 hour shift

Saturday: 1 hour spin class

I have also been looking for new recipes so I don’t get bored. Like the paleo pumpkin cake and the protein version!

Baby and dog sitting

Sorry I have been MIA the past few days, between work and not having much to say I didn’t want to bore you.

I also have been staying busy doggie sitting, and baby sitting.


The twins are two months old and really interacting more


Of course that means, my house is a mess. OH WELL! Better to live in a messy house, than spend life cleaning constantly 🙂

I also made it to the gym for spin class today, I was a red sweaty mess!!


Then I felt bad for all the girls who come to the gym with a full set of make and their hair down and curled!!! (yep. they still exist haha)

Andrew and I also ran to Big Lots and got tons of stuff for xmas, and even some new pans for baking!


I also snacked on these bad boys.


I love the ones from trader joe’s, so I had to see about these. They were only a buck 🙂

Well thats about it, I have been staying busy, eating great (less than 80g of carbs a day!) and getting to the gym. And I lost 2lbs this week! Now I am going to read and take some much needed me time 🙂

What I Ate Wednesday: Recipe modified

I usually talk about the food I eat on Wednesday, to follow along with Peas and Crayons and lots of other bloggers, but today, I will show you pictures of things I ate and then get right to the good stuff. A MODIFIED DESSERT RECIPE.

so that is the NOT exciting part. After the pumpkin cake mug recipe that I found, I realized the coconut flour + the honey sometimes put me way over my carbs. (im trying to eat less carbs. My body loves carbs=my body gains weight when I eat them)

Anywho, so I wanted to try something that wouldn’t have lots of carbs, AND would still be tasty. I basically just substituted a different ingredient.


Protein Pumpkin Cake for One


-3tbsp vanilla protein powder

-3tbsp canned pumpkin

-1 egg

-2tbsp butter

-1tbsp honey

-cinnamon + pumpkin pie spice


1.) mix wet and then dry ingredients

2.) microwave for 2 minutes

New recipe + Elf 4 Health

You. Have. To. Try. This.

After a 12 hour shift, a trip to the gym, and a small dinner, I needed something sweet. I googled paleo cake desserts. I first found this cookie dough in a mug (I swear this is for another day!)

When I found the pumpkin cake, I knew I found a winner!! And it was really easy




  • 3 tbsp of coconut flour
  • 2 tbsp of butter
  • 1 egg
  • 3 tbsp of pumpkin puree
  • 1/2 tsp cinnamon
  • 1/2 tsp of ground nutmeg
  • 2 tbs of honey
  • 1/2 tsp of baking powder


  1. Place wet ingredients in mug, then dry ingredients.
  2. Mix!
  3. Heat in the microwave for 2 minutes
  4. Let cool and Enjoy 🙂

Sky zone with Andrew

To  continue our fun filled weekend, Andrew and I headed to skyzone. We tried on Saturday, but they had no spots left.

Today we were able to reserve an hour of fun!


I didn’t take a lot of pictures, because I was jumping as well!

It was so much fun, and I put my camera in the locker so that I could enjoy the hour with Andrew. I haven’t really just relaxed and enjoyed the time with Andrew. I am always thinking about what I need to do next, or make for dinner, etc etc. FINALLY, I am understanding how to step away from house work, bills, and emails, and spend time with Andrew. He won’t be small forever!
