Sweet Potato Casserole

I hope everyone is having a great Thanksgiving. I will be sharing the day with my NICU family, and then heading home to see some of the family. Each year we all bring in something to share together and I wrote down sweet potatoes 🙂

Sweet Potato Casserole

Ingredients:

Sweet Potatoes                                                                                               
      4 large sweet potatoes
      ½ cup canned coconut milk
      1 Tbsp. coconut oil
      1-2 Tbsp. maple syrup
      1 tsp cinnamon
      ½ tsp nutmeg
      juice of half an orange
 
Pecan Topping
¾ cup chopped raw pecans
1 tsp cinnamon
1 Tbsp maple syrup
1 tsp melted coconut oil
 
Directions:
1.) Bowl large pot of water. Preheat oven to 350 degrees. While the water boils, peel and dice potatoes into chunks.
2.) Place sweet potatoes in boiling water, and boil till you can stick a fork in them
3.) Drain water. Place rest of ingredients in pot with potatoes. Blend with hand mixer.
4.) Place in oven safe dish, then top with pecan topping.

UPDATE: After celebrating with my NICU, I have to say this sweet potatoes are AWESOME!!!!!!! I also ended up drizzling grass fed butter on top, I think it was the best part!
