What I ate Wednesday

Just a sneak peak into my eats for the day, also all the recipes for this weeks dinner

7am: coffee + collagen + Mct oil+ pumpkin spice

10am breakfast: egg whites, jalapeños, green peppers and ground turkey with tomatoes on top

Snack these are very good! My mom got them and they are only 100 calories

2pm lunch: chicken leftovers + broccoli slaw and grapes

4pm snack: sweet peppers

Dinner: chicken noodle soup in the crockpot

Dessert: Greek yogurt, apple, sliced almonds, almond butter, cinnamon and a dash of stevia


Weekly meals

Each weekend I plan the weeks meals. It helps to make a list and then add to he grocery store to get all the food. I prefer this because I don’t like dealing with crowds, and I spend less money just going once. This is what is planned for this week

Monday: paleo beef and broccoli (good not the best)

Tuesday: grilled chicken bruschetta (yummy)

Wednesday: crockpot chicken noodle soup

Thursday: pulled pork

Friday: leftovers

Saturday: wing it

Mine is aldi! I go there every week and schnucks only every other. Aldi doesn’t carry my favorite broccoli slaw 😫

Weekly meal prep

Just a few months ago, I started a new job that was now Monday through Friday. Not at lot changed, since I was getting up with Andrew for school anyway. But the one thing I needed to make sure I had ready was healthy food. I have found over the years that carbs and sugar don’t do well with my stomach, so no eating at the hospital cafeteria for me.

Instead, on weekends I make sure to have my breakfasts prepped and ready.

I also hate waking up earlier than I have to so this way I just packed them the night before.

Lunch is always leftovers, so that just gets packed in my lunch. Not much prepping for that. But before heading to the store, I will plan dinners for the week.

I always start by making some sort of protein. Turkey bacon or ground turkey in one pan.

I will mix up 1 cup of egg whites with my Emerson blender and cook that in a second pan and repeat that five times

While those are cooking, I will chop the veggies and then cook them when the eggs and protein are done.

And finally the jalapeños get cooked.

I then measure the total, and separate into five different containers

Of course I add spices!

So super easy. Place the egg whites, then divide the jalepeno, divide the green pepper, divide the turkey bacon, and sprinkle with spices. And they are good to go in the frig to just pull out for the next morning!!

Weekly workouts Dec 3

Another week, another week of workouts and trying to get some sleep. Some days went well, others I need to work on.

I have also decided to start including my weigh ins for the week (which happen Thursday) and this week I was down 1.4lbs!!! My goal is to lose about 18lbs. Please feel free to help with any suggestions or motivations!

Favorite workout of the week was the yoga. Going to yoga with my mom on mondays has been a great way to start the week. Mondays can be really stressful at work, so meeting her for yoga helps so much!


goals for the week

Goals this week:

1.) at least 10,000 steps a day

2.) sleep at least 7hours a day

3.) lose weight even if it’s only 0.1 lbs!

Brewery lights

One of my favorite things during this time of year, is going to look at Christmas lights. We are so lucky to have so many parks and places that have lights.

This was our very first time going to the anheuser Busch lights. It was a little chilly, but we layered up as best we could. We started out at dinner at O’Connells and then to see some lights 🎄

What makes the brewery lights different, is they give adults arm bands to receive five samples of the brewery beers And then you walk around the brewery with the booth stops along the way. And it’s a free event with places you can buy additional items or more drinks and food.

But the best part are the Clydesdales you get to take your picture with. I love horses so this was the highlight of my night.

We ended the night with Andrew making a smore, kits are bought at another booth. It was a great night with the guys. And now I just need to warm up haha

Weekly workouts

When I used to blog several years ago,I would include my workouts for the week. Not only does it show me where I need to improve but also all the amazing things I have done!

From 2013…..

I mostly do workouts at my crossfit gym and go to yoga once in awhile. I do need to start adding in rest days. I enjoy working out and that feeling of lifting heavy or getting my legs moving. Since I work at a desk job now, I don’t move anywhere need what I used to!

But this week I realized Saturday morning, no crossfit for me. I was happy I listened to my body and had a great day hike with Steve

Sunday: crossfit (6,811 steps)

Monday: rest day (9,853 steps)

Tuesday: crossfit (12,274 steps)

Wednesday: crossfit (8,982 steps)

Thursday: crossfit (12,939 steps)

my favorite workout was today. I did the 12 calorie row , 115lb deadlift, and did overhead press with 25lb dumbbells instead of handstand push-ups.

Friday: crossfit (11,135 steps)

Saturday: 5.5 mile hike with steve (16,946 steps)

Not too shappy on the steps!

Goals this week:

Indian camp creek 5.4 mile hike

Today Steve and I took an adventure out to St. Charles, outside of St. Louis, for a hike. We had the day free and so we could come and go as we pleased. This park was on our to do list, but being almost an hour from home it is not always easy.

we headed out for a day date and since it was over 60 degrees out, it was SOOOOO nice.

This trail is pretty flat with only a few small hills. And I use “hills” lightly

It took us two hours with a few stops along the way for pictures

This park is pretty amazing and has several shelters with picnic tables and spread out that you aren’t on top of other areas.

You can also fish there and they have camp sites. But the big thing for warm weather would be the creek you can get in! Of course not today haha 😉 and a look out tower that was former a grain silo.

then it was time for a steak dinner at home, a Christmas movie, and Steve falling asleep before 7

(side note he works nights and is usually up and asleep at strange hours. Today he has been up since 3am)

Things I’m loving #1

I follow several bloggers and love seeing the post they have about their favorite things list and I thought I would give it a try 😁

First is this naked bee hand lotion that I keep at work at my desk. As soon as I walk into the hospital my hands dry right up!!! I use it first thing and it is not greasy at all!Orange blossom honey is the scent to get!

ur cristmas cards for this year. I ordered them on target.com and now I just need to put them together 😎

I use this dry shampoo Multiple times a week. I used to wash my hair everyday and it was breaking and so dry. I also like that even though I have dark hair, once I rub this in, you cant see it and I don’t look like I have grey hair haha

This tea has been a big hit in our house. Even Andrew drinks it! I like it after dinner (and dessert) while relaxing before bed.

And lastly is my chalkboard sign in our kitchen. I love updating it for all the holidays. Andrew told me “Mom I didn’t know you were so artistic” haha I’m not but it was sweet of him.
