Day 7: prepping for 12 hours

While everyone is off work for the three day holiday weekend, I will working. Yes I had during the week off, but I’d rather be at the pool with Andrew. Oh well! On Thursday, I got to food prep, but first the eats for my day.

6am: Eggs and pepper

10am: bacon

2pm: sausage, pepper, and cauliflower mash. peach for dessert

snacks the rest of the day: pepperoni slices, almonds and cashews, cucumbers, and Colby cheese, apple (i only ate the pepperoni and nuts)

Dinner: bunless burger, salsa, paleo cookie dough balls

Workout: 11,600 steps!!

The prep on Thursday took awhile, but now I have lots of healthy eats to grab for the next three 12 hour shifts.

  • First, I started with the peppers and sausage

All I did was heat the oven to 375. cut them up. mix with olive oil. then bake for 30minutes or until desired texture

  • I noticed there wasn’t much for three/four days. so I did make baked chicken wings, just in case.

These are also easy. boil for 10 minutes. then place on baking sheet and olive oil. and bake for ten minutes at 425 in the oven. flip and bake 5-10 more minutes

  • Next up, was cauliflower mash.

All you do is steam the cauliflower till soft. then use a food processor to mash. done!

Lots of good food to have in the frig. And I am SOOO ready for the next three days, well at least food wise haha

What I Ate Wednesday

With grocery shopping out of the way this week, I had lots of options

Of course, breakfast was my all time favorite: Protein Banana Pancake

P1080148(basically: one banana, 2 eggs, 1 scoop protein powder, cinnamon, and baking powder. top with almond PB and left over banana)

But for the first time I tried coffee with coconut milk.

I had the vanilla cups for my keurig, so I just wanted to use them up. COnsidering the amount of sugar I can only IMAGINE I drink at Starbucks, I am considering this a success. And the coconut milk was pretty yummy!

Next up for lunch, was meatloaf, cucumbers, and a peach.

Of course for dessert I had two blueberry muffins.

Predinner I had a about a million few cashews, so I wasn’t too hungry. So I just had some baked chicken wings.

I also grilled some steak and sweat potatoes to have ready for when I work in the next few days.

What I ate Wednesday: It’s all about the watermelon

THis weeks eats are actually from Tuesday (SHHHhh don’t tell anyone)

Breakfast: Banana Pancake (a little overcooked) and 2 strips of turkey bacon

What I Ate Wednesday

This What I Ate Wednesday, is actually from Monday. I worked Tuesday and Wednesday, and those are usually pretty boring

Breakfast: Almond Pancakes (without the agave nectar), PB topping, and sausage

PB topping: 1 tbsp PB, 1/3 scoop vanilla protein, and water. Mix and enjoy!

Breakfast looked very “brown” , so I tried to make lunch colorful

Lunch: Baked Chicken Wings, cucumbers, and watermelon

-I would have to say bananas because I use them in a lot of recipes, I have been missing them lately 😦

Paleo Recipes!

Well I guess the stress has finally caught up with me. Today I took Andrew to school, and then slept till 11. I mean I can NEVER do that. I usually can only sleep till 6:30 haha.
I told myself, that I would just lay down for an hour. But my body had other plans. Even when I woke up, I didn’t feel like 100%. BLAH

After running a few errands, like getting my bike a good tune up! I head home to relax and look up new recipes!

Last week, I was eating really well, but I need to start branching out! Eating the same things will just result in me eating the “wrong” foods.

I found some new recipes that I wanted to share with you!

– I have made these muffins before (tiffany always has the best recipes!)

I know that these are all paleo, and though I don’t eat 100% paleo, I try each day to each has “natural” as possible. When I do, I have more energy, sleep better, and my belly is thankful too
