Got a little TOO busy, time for pancakes

So I MAY have gotten alittle too busy, alittle too stressed out. So you know what that means….

Yep. Not feeling so hot today. I woke up not feeling 100%

This morning, I didn’t want eggs and bacon. Since I wasn’t feeling good, I wanted some comfort food and that ALWAYS means pancakes.

I went to my handy dandy pinterest, and found this recipe for paleo coconut flour pancakes. I was alittle skeptical because the ingredients were pretty simple, but don’t let that fool you. They were amazing! I added some scrambled eggs, and bacon

Today, I had a lot planned. workout at the gym. papers. bills. etc etc. Instead, I am drinking coffee in bed.

Checking emails, relaxing, and watching The Incredibles. I want to be able to breath tomorrow when I have my MRI. Everyone say alittle prayer around 6am that they find fat when they scan that darn mass. haha

Do you workout when you are sick?

-Usually I do, but the class I take, I usually can’t breath/move when I feel great, so I knew that I wouldn’t be able to push it, and then I would get frustrated. it would probably also not help my body heal, and we need that!

Sometimes you just need an egg mcmuffin (paleo recipe)

After yesterdays huge success with the dinner rolls, and then the dessert, I knew I just needed to try something this morning.

And it is a KEEPER!

When I made the rolls yesterday, I also made some that were a little larger and flat. And they were the perfect size for an egg sandwich!

2 eggs + bacon + flat roll=DELICIOUSSSSSS

A perfect day with Andrew

The day started off early with just me and Andrew. It was so nice not to have any place to be, and we were just laying around before it was time for breakfast

I started with eggs, peppers, bacon, 2 sausage links, and blueberries

The rest of the day included running to Target, and cleaning the house!

Andrew and I tackled his desk and a few closets! (I got rid of so much junk!)

Then it was lunch and off to a swim party for Andrew’s friend!

yep, I had lunch with superman 🙂

Andrew went to the party, and I headed to the gym! I need some sweat and to de-stress. It definitely helped!

Then we went to dinner with my mom and nephew, and we went for a walk

The neighbors were having a party, with a band! So we went exploring….

It really was a great Saturday, just me and Andrew 🙂

Another day at the cabin

After a great first day at the cabins, I was up bright and early for another day at Sam Baker. I started my day with a run! (more on that later)

We started the day with eggs, bacon, and cherries- YUM

-I definitely feel more alert at night, but my body seems to think 6:30 is always a good time to get up haha

Weekend Breakfast

This breakfast was AMAZING and the pancakes were the hit of the whole thing. YOU. MUST. TRY. THESE!

I used my smart stick that I got for Christmas. I didn’t want to get out the BIG food processor.

After mixing, it was time to start cooking!

I found the recipe here, but of course made a few changes 🙂

Ingredients

  • 2 cup almond flour
  • 1 banana
  • 4 eggs
  • 2/3 cup almond milk
  • 1 tsp baking soda
  • pinch of salt
  • 2tbsp coconut oil

Directions

1.) Mix flour, banana, eggs, and milk.

2.) Add baking soda, and salt.

3.) Heat skillet with coconut oil, and pour batter

4.) Flip then enjoy!

The stomach bug has officially struck  again. First me, then my dad, and now Andrew. Last night was ROUGH. He was up every 20 minutes in the bathroom. I think we had one 2 hour stretch and that was it. I was exhausted!

I headed to target to get 7up, yogurt, ice cream, raisin bread, and gatorade. (all the things needed for tummy issues! haha) Thank goodness there is a starbucks IN target!

Since 6am, Andrew has been feeling MUCH better. Thankfully because I had to QUICKLY clean the house for a 9am appointment to get my house reappraised.

There is a big snow/ice storm here, so Andrew’s school has been called off.

So we are watching cartoons and relaxing. While I catch up, and get some laughs from facebook
