Chicken and Cookie Recipes

I am so sorry it took so long to get these up. But they are FINALLY here!

Spinach and Ricotta Stuffed Chicken

SPINACH AND RICOTTA STUFFED CHICKEN

Ingredients:

1 package chicken (about 1.5lbs)

1/2 cup part skim ricotta

1 package frozen chopped spinach

2% shredded mozzarella (1/2-3/4 cup)

3/4 c seasoned bread crumbs

3 egg whites

salt, pepper, garlic powder

Directions:

Defrost spinach in microwave. Squeeze out water

Place in bowl with ricotta, salt, pepper, and garlic powder

Add 1 egg white and mix w/ fork

Beat other 2 egg whites with dash of water, salt and pepper

Coat chicken in egg and then breadcrumbs. Place on baking sheet.

Put spinach mixture on top of chicken

Top with shredded cheese

Roll Chicken and secure with toothpick

Bake 250 degrees for 25-30 minutes

Mini Chocolate Chip Cookies

Ingredients:

2 tbsp butter, softened

2 tsp canola oil

1/2 cup dark brown sugar

1 tsp vanilla extract

1/8 tsp table salt

1 large egg white

3/4 c flour

1/4 tsp baking soda

3 oz semi sweet chocolate chips (1/2 cup)

Instructions:

Preheat oven to 375

Mix all dry ingredients together. and wet ingredients separately. Then slowly add dry to wet.

Bake and EAT!

Chicken Stroganoff Recipe

Im sorry Im not sure were I found this recipe. But I know weightwatchers has a recipe like this.

Chicken Stroganoff

1.65 lb skinless chicken breasts (frozen of fresh)

1.5 cans of 98% FF cream chicken soup (condensed)

1.5 packages of dry onion soup mix

24 oz FF sour cream

8 oz mushrooms

  • Place chicken in bottom of crockpot
  • Mix all ingredients but mushrooms. Pour over chicken
  • Place mushrooms on top
  • Cover and cook on Low 6-8 hrs or till chicken cooked

I changed the time to 4 hrs (it was fine) and I would use less sour cream or chicken soup. Otherwise it was DELCIOUS my dad and I loved it. My mom and son who are SO picky- didnt even try it.

Nice Little Saturday

Even though it was a busy saturday at times, I also got a nap (YEA!)

Breakfast:
Omlet with spinach, red pepper, and american cheese. with a side of PB and banana

Then I took my son to swim class, and to get a hair cut. THen to target.

I was starving for lunch! chicken, peppers, mushrooms, and cheese in a 96 fat free tortilla

The cheese totally made this!

 

Of course, then I had some cereal, PB, and soy milk

Then I got a nap (YEA!!!!!). And went to dinner with my son and mom

(notice the legos on the table- we take them EVERYWHERE haha)

While out, I had A TON of spinach artichoke dip. Two pieces of pizza and a few fries from my son

After putting my son to bed, I changed and went out for my cousin’s/best friend’s birthday.
I got three beers (blackberry wheat- YUM) and water as well.

I had a few scoops of someone’s artichoke dip (I know I love this stuff) and a small bowl of beer cheese soup. It was delicious with pretzel croutons on top

Sorry the pictures arent the best, I tried to pretend my pictures werent on purpose……people here in the midwest arent fans of food blogs. they think they are weird (IM NOT ONE OF THEM! haha)

Question for you:
When you go to a restaurant do you try something new, or go with a favorite?
-I use to eat the SAME O’ THING all the time. and tried to stick with salads (but who wants to eat salads for the rest of their lives?)

Dad’s Birthday Part Two

Another crazy saturday.

Started out with a bowl of cereal (fiber one, kashi, chocolate protein powder, milk, and PB). Forgot my banana- DARN. but still good 🙂

Then off to the gym, after scraping four inches of snow off my car to go to the gym with my friend. We were taking a new class, I love having a workout buddy!

Then I shoved with the “help” of my dog, Riley

For lunch it was a repeat of dinner, chicken pasta sauce, provolone cheese, peppers, and mushrooms.

Then I had a TON of trail mix. It looks like I measured it….but went back for more…and more

Time for birthday celebration Number Two with the whole family!

Turkey burger, potatoes, and salad

Burger also had cheese, pepper, tomato, lettuce, and ketchup. YUMMMY

 

 

Of course I had some of the chocolate cake I made and some cookie dough ice cream

  • Question for you:

Do you prefer chocolate or vanilla cake?

I like vanilla with vanilla icing

Spinning

Today I got to sleep in till 10 WAHOO! And Im so glad I did because spinning class KILLED my legs!

Before the gym I had two pieces of bread, better than PB and 1/2 banana

After spinning, I had breakfast/lunch. Two eggs, red peppers, and american cheese with a side of clementine and other 1/2 banana

I then was feeling EXTREMELY dehydrated, so I made a green monster

Dinner was chicken, pasta sauce, mushrooms, and red peppers w/ side strawberries

My son and I then had a movie night
