Another early and BUSY day in the NICU. It started off nicely then 2pm hit and we got a very sick baby.

 I didnt stop running til 730 that night!

Well lets get to the eats (they arent pretty)
7am Hard Boiled Egg
10am oats, banana, PB
12am HUGE cookie
145 SPinach salad w/ pecans, chicken, cranraisins, and feta
2pm anothe cookie……
5pm 2 hershey kisses and 1 dove chocolate
9pm shrimp, pasta, laughing cow, and veggies

Well at least I started and ended the day MUCH better than the middle of the day.

And even after a crazy day. I am looking at the positive
-My knee only hurt ONCE when walking from the parking garage to work. (most people take the shuttle, I walk)
-I went to the gym afterwards! I did 20 minutes on the elliptical and 10 minutes on the bike!!

Calories- calories burned= net
not too shabby for eating 2 cookies the size of my head! and Im glad I went to the gym to work off not only the calories, but some frustration. My son is at his dad’s and I miss him. My ex has also not tried to talk about the future, and I dont know what to do about it


While working out, I watched the Cardinals (THEY WON! WAHOO!)
When I was almost done with the elliptical, I noticed a pretty cute guy down the way.
I thought man, Im sweaty and gross. I was also wearing a cardinals shirt

I was like OH Man. Does that make me cool?  not only am I watching the game, but Im wearing a cardinals shirt?
HAHA oh well. Im really not THAT big of a fan!

OHHH well at least its good (delicious and good for my bod! haha)

After breakfast, I got on my bike again. A good 11mile bike ride around the park. It was perfect!

Then I got a text- ANDREW IS 30 MINUTES OUT OF ST LOUIS!!!! Better hurry!

Time for lunch! I ate my dessert first…………..with a million cookies then the main meal

Pork tenderloin sandwich with peppers, shredded cheddar and ketchup! YUM

My son and I then watched the Sandlot. It was exhausted and almost fell asleep on the car ride home AT TWO IN THE AFTERNOON! AFter several hours of playing with harry potter legos it was time for bed!

I enjoyed my “ME TIME” with  french bread, and wine

I usually dont drink on just a regular monday night, but I felt like it

UPDATE: I few days ago I mentioned that my son’s dad and I were talking again. Just about the past and how we still care about each other. Well we haven’t talked about it since. BUT we are getting a long SOOO much better. Who knows what will happen, but I love that everyone is getting along

Do you drink? Do you prefer beer, wine, or the hard stuff?

– Im usually a beer gal, but wine is nice as well. I tend to stay away from the hard stuff.  (thats when trouble starts haha)

cookies for dinner

After church it was time for breakfast. It MAY look different…

Its basically my favorite egg sandwich, but on a mission wrap. I also had to ditch the banana, it was on its last day. i knew I should have used it for baking instead (well you live and learn)

Then a few hours of packing. I swear it never ends!

Lunch was a boca burger. WELCOME BACK PEPPERS! We havent had any in the house, but luckily Sams was on the agenda today

For dessert, my sweet tooth was SCREAMING! So I had a pudding and pecans. It did the trick.

It was then off to my kickball game!

I had a piece of french bread and a small cashew cookie larabar on the way out the door

Yes. We are the Squirrels. The first game was really fun. The other team played fair and everyone had some friendly competition. We tied 7 to 7. The second game was a different story. The team was MEAN!! They were even bad talking ME! And im the nice one! haha. We ended up losing 2 to 1.

Right after that it was time to head to my house and paint! Yep. The cabinets are ALMOST finished!

But its the last one!!! so only two more coats till Im done!!

I swear. I never want to paint cabinets again in my life haha

THen. I got a call from my mom that my older brother got into a motorcylce accident. Luckily, he wasn’t going that fast. The other car wasn’t paying attention and just got the front of his bike. It did fly off his bike, but his right leg was only affected. The hospital did xrays and a CT scan. And everything looks ok. Although he is on crutches because his leg is swollen. He was EXTREMELY lucky!

Needless to say, even after all the running around, and my brothers accident. All I had were cookies for dinner. But hey they were good!! so good…I didnt take a picture haha

I also had a small slice of frozen pizza and a drink in a bag. Later that night. It was a good stress reliever 🙂

Chicken and Cookie Recipes

I am so sorry it took so long to get these up. But they are FINALLY here!

Spinach and Ricotta Stuffed Chicken



1 package chicken (about 1.5lbs)

1/2 cup part skim ricotta

1 package frozen chopped spinach

2% shredded mozzarella (1/2-3/4 cup)

3/4 c seasoned bread crumbs

3 egg whites

salt, pepper, garlic powder


Defrost spinach in microwave. Squeeze out water

Place in bowl with ricotta, salt, pepper, and garlic powder

Add 1 egg white and mix w/ fork

Beat other 2 egg whites with dash of water, salt and pepper

Coat chicken in egg and then breadcrumbs. Place on baking sheet.

Put spinach mixture on top of chicken

Top with shredded cheese

Roll Chicken and secure with toothpick

Bake 250 degrees for 25-30 minutes

Mini Chocolate Chip Cookies


2 tbsp butter, softened

2 tsp canola oil

1/2 cup dark brown sugar

1 tsp vanilla extract

1/8 tsp table salt

1 large egg white

3/4 c flour

1/4 tsp baking soda

3 oz semi sweet chocolate chips (1/2 cup)


Preheat oven to 375

Mix all dry ingredients together. and wet ingredients separately. Then slowly add dry to wet.

Bake and EAT!

One small step at a time

Im still trying to get my eating under control.

Before going to work for a class, I had breakfast that kept me full. 2 eggs, peppers and cheese with a clemetine

At work I did have two twix fun size. But I stopped (this is actually a big step for me. Usually I eat ALL candy in sight)

At home, I tried to get some things done: laundry, cleaning, and putting away clothes….and then I fell asleep on my bed….with all the lights on haha

For lunch: I tried a chicken/pepper wrap, but there was too much soy sauce I put on there. I only ate 3/4 of it.  And grapes

My nephew came and I love him so much! We even had a dance party in the kitchen when my son got home! I then had a bowl of cereal, but I measured everything

(again. this is a step for me. I usually just POUR and I usually go back for seconds too)

While making dinner, and THESE, I snacked on pecans

Dinner was a spinach chicken recipe. My family LOVED it. (I was surprised, they are VERY picky).

For dessert, I had three cookies and 1/2 cup ice cream
