Pumpkin pie Oats

Pumpkin Pie Oats

Ingredients:

-1/3 c oats

-1/3 milk

-1/3 c water

-1/2 banana

-1 egg white

-1/3 c pumpkin

-cinnamon and pumpkin pie spice

-toppings: cranraisins, granola, agave nectar, peanut butter

Directions:

-Heat oats, milk, and water on stove top till it boils. Then lower heat and add remaining ingredients. Had goodies to the top and enjoy!

Challenge Day #1

Day 1 of the challenge is complete. And I feel like I did a pretty good job! How about you guys?

The day started w/ breakfast with Andrew. He had oatmeal, I had two eggs w/ peppers and banana w/ PB. FILLINNNGGG. I also had a gas station coffee

I surprised Andrew by being at his school for the hearing/vision tests. I also use to love when my mom came to school. The whole first grade was excited haha. I love seeing him ❤

I then grabbed some pistachios and grapes

And headed out for a bike ride.  It was 80 degrees outside, and since I still don’t know whats going on w/ my dizzy spells, I stayed away from running. Unfortuantly, the bike ride wasnt too much better. My chain fell off TWICE, but I was able to get it back on. I was able to get 10 miles in, but it wasn’t pretty. OH well better than nothing!

Lunch was a left over hamburger w/ ketchup, and a big salad: lettuce, cranraisins, sunflower seeds, pecans, and bleu cheese. Desert was dates and PB

I then tried to make my grandpa, who turns 85 today!, some cookies (recipe to come sunday). The first round didnt work out, but it will work for granola! second round: USE PARCHMENT PAPER

Andrew and I had a pizza  for PI day. I also had another note 🙂

We also filed out our March Madness Brackets. Andrew has Mizzou winning the whole thing. He loves EVERYTHING mizzou

And I had some “granola” w/ a Oiko’s yogurt. YUM. with new books from the library. I finally got the Paleo Diet for Athletes! Which both Tiffany and Angie have recommended 🙂

Challenge for today: I feel it wasn’t too bad. what do you think? I also NEVER felt guilty about eating anything. When I eat because of emotions I always feel INCREDIBLY guilty and pissed at myself for eating. then I eat more. So it is a big cycle. Today, I didn’t feel any guilt wahoo!!

Challenge for TOMORROW: Run at least 3 miles outside/treadmill, and strength training. I also want to keep Day #1 challenge up!

2 types of granola!!!!!

Peanut Butter Granola

Ingredients:

-2 tbsp peanut butter

-2 tbsp honey

-1/4 tsp cinnamon

-2 cup oats

Directions:

1.) preheat oven 325

2.) Combine PB and honey and microwave for approximately 20 seconds. Stir.

3.) Sitr cinnamon w/ PB and honey

4.) Add oats and stir until oats are covered

 

 

 

 

 

 

5.) Spray cookie sheet and spread oats out

6.) Bake 7-8 minutes

7.) Let cool until crunchy!

Chocolate Protein Granola

ingredients:

-1 tbsp honey

-3 tbsp water

-1 tsp olive oil

-1/2 scoop chocolate protein powder

-2 cups old fashion oats

Directions:

1.) preheat oven to 350

2.) combine honey, water, and oil and mix.

3.) Add protein powder. Stir

4.) Add oats and mix until coated

 

 

 

 

 

 

5.) Spray cookie sheet. Spread oats

6.) Bake for 20 minutes

I found these recipes from Julie’s blog Peanut Butter Fingers. I did change a few things but You have to try them ASAP!!!!

Calm Saturday

Saturday morning started w/ Andrew climbing in my bed and watching cartoons 🙂

I also called the doctor and Andrew’s 72 hr strep test was NEGATIVE wahoOOOOOOOO

Then it was time for breakfast and the gym. I didn’t have much time at the gym. But I got on the bike (my legs still kill me from my run!) and hit the weights. While working on my abs, there was this guy doing pushups like it was NOTHING. I think he might have notice me staring at him…….oh well haha

Quick shower, and then off to Andrew’s last indoor soccer game CAMPIONSHIP GAME. They have defiantly improved over the past weeks, but ended up losing 😦 They still had fun, and I had a blast catching up w/ the other mom’s

Next on the calendar, a hike w/ the cub scouts…….except it was in the 30s today. So we didn’t attend. Instead we hung out. I stayed off the computer. We played legos. I read alittle bit of my new book Fire. This is the Companion to Graceling.

I also headed into the kitchen, and made some homemade granola (two kinds!!) recipe to come soon!

We also watched the Mizzou (tigers) -KU (jayhawks) game. If you are from the Midwest, you know they don’t like eachother.

 I didn’t attend either school, but we cheer for Mizzou (although I know some pretty intense fans from both sides!)

Andrew unfortuantly, is still trying to gain all his energy back, and was exhausted! He feel asleep on my lap. It made my heart grow, and hope he will never grow up

We had an AMAZING evening of doing nothing. We haven’t had this in so long. We had hamburgers (I tried paleo hamburger buns) and we got ice cream for dessert.
