Oatmeal Twins

Lately, I have been trying to find ways to add veggies and protein to Andrew’s diet. He is not a carnivore in ANY sense, so I try to add it when I can. And Andrew loves them!

Adding meat without him knowing is next on my list haha

This week I found ANOTHER way to add a veggie and some protein to Andrew’s breakfast. Oatmeal


Andrew’s Protein Oatmeal

  • 1/2 cup oats
  • 1 egg
  • 1/2 cup pumpkin
  • 1/2 tsp cinnamon
  • 1/4 cup cranraisins
  • 1 tbsp agave nectar

I added a little milk after it was cooked.

He ate the whole thing!  (although it might have been too big of a portion, next time I’ll go with 1/3 cup of oats)

Spring cleaning

I started my day feeling a little under the weather, so Andrew and I started our day with matching oatmeal


Andrew and I started the day with a two mile walk around the park with Andrew and coffee. We even saw two bluejays

After our walk, Andrew had a friend over and I attacked the house


I cleaned the basement, the coat closet, the kitchen, you name it…it got cleaned


you can walk in now! haha. no joke.

basically, I was trying to stay busy so I wouldn’t eat a ton of food!

My only break was lunch while watching Modern Family


After dinner, we headed back to the park for tennis and baseball

We are getting a lot of sunshine, exercise, and quality time this week 🙂

Pumpkin pie Oats

Pumpkin Pie Oats


-1/3 c oats

-1/3 milk

-1/3 c water

-1/2 banana

-1 egg white

-1/3 c pumpkin

-cinnamon and pumpkin pie spice

-toppings: cranraisins, granola, agave nectar, peanut butter


-Heat oats, milk, and water on stove top till it boils. Then lower heat and add remaining ingredients. Had goodies to the top and enjoy!

No “oat” oatmeal

No “oat” oatmeal

serves 2


– 1/4 cup walnuts

– 1/4 cup pecans

– 2 tbs ground flax seed

– 1 tsp cinnamon

– dash of nutmeg (I used pumpkin spice)

– 1 tbs almond butter (I used PB)

– 1 banana mashed

– 3 eggs

– 1/4 cup almond milk (I used soy milk)










1.) Add walnuts, pecans, flax seed, and spices to food processer and pulse (stop before it becomes a powder)

2.) Whisk egg and almond milk in a bowl until it is like a custard

3.) Mashed a banana and almond butter and then add to custard

4.) Add nut mixture to custard.

5.) In a medium saucepan, warm the mixture will it is the desired consistency. Stir frequently

6.) I topped w/ strawberries, 1/2 a banana, and agave nectar

I was worried this was going to be too “nutty” but it was DELICIOUS. I really wanted to eat the whole recipe 🙂


Temptation Island

I am NOT talking about the reality TV show, I am talking about the NICU

Today was my first day at work after deciding what to “give up” for Lent. (although I’m really not giving up anything. Unless you count cookies, cakes, candy, and computer time.)

Anyway, first thing I walk in this morning to find donuts in the nurses lounge. I’m not a HUGE donut fan (I mean, Ill eat them! haha) but they aren’t something I crave. But at 6:30 when you are tired, you will eat anything. I ignored them.

I ate a half bagel thin, PB, and 1/2 banana before coming to work. So I didn’t NEED anything.

Breakfast came around 10am: Oatmeal, cinnamon, and banana

While eating my breakfast, someone brought in cookies. COOKIES AT 10 AM COME ON!!!! They kept staring at me. Saying “just try a little piece”. NO THANK YOU. When I was done w/ my oatmeal, I left the lounge. Putting distance between me and the cookies. It worked.

Midmorning snack: cashews

Mom update: I talked w/ her this morning and she is sounding much more alive than yesterday. it must be all the yummy things I got her! 🙂

Everyday, I have to walk by the dieticians office to get to the nurses lounge. And you know what they have, Candy. LOTS OF CANDY! I see it everytime I walk to the lounge, office, or front desk. But today, I resisted all of it.

Lunch: Mini Lasagna Cups, sweet potato fries and ketchup, and pudding cup

Snack: Apple slices (I wasn’t even THAT hungry, but I knew I needed something to get me through to the end of my shift)

Dinner: Shrimp Pasta

Before leaving work: Got a call from Andrew’s doctor at 4:55pm. When I called at 5:05, it said they had left the office. If they even tell me he is positive for strep or flu, I might scream

three days!

Breakfast with the little guy was oatmeal again. Its in the 40s here!!!

My oatmeal: oats, PB, banana, cinnamon, and a scoop of pumpkin.

I tweeted this morning about whether or not I should go back to bed or go to yoga….

Well I told myself, YOU’RE GOING!
And it was totally worth it. I even tried a new pose (we used the wall though, which helped A LOT!)

I wasn’t too impressed with it

On the way home, I got a 300 calorie pumpkin spice latte. Im not sure if it was worth it, but MAN it was good!

Then lunch. Good o’ pasta, broccoli, peppers, chicken, and parmesan cheese

And dessert was a chocolate pudding with some cinnamon pita chips. It was DELCIOUS.

 time to get Andrew from school, do homework, and then I cleaned up the Lego mess……and I found that the red spray paint SPREAD PAST the drop cloth I put down. AWESOME. So for an hour I was scrubbing that off the laminate floors. (it still looks pink. darn it)

Dinner was thanks to trader joes pizza dough. Love that stuff and my picky eater does too!

I added corn to my pizza- DELICIOUS!

 we got Ted Drews ice cream. (my weakness) and watched the cardinals game at my parents house, with my parents, nephew, and andrew

I defiantly ate way to much ice cream. Deep breath- moving on.

(I guess I shouldn’t talk. I ate a whole galloon of ice cream after dinner and it was 48 degrees outside haha. But the oatmeal and coffee this morning was awesome!)

End on a positive note, w/ a joke

Today started out with a GREAT day off work. Instead of going back to bed, after taking Andrew to school, I headed straight to the gym (best decision of the day!)

But first we made apple cinnamon oatmeal because it was in the 40s here! Even Andrew wanted this (instead of his usually cereal..blah)

I also had a pumpkinspice coffee. The first was good, but the next tasted really watery, not sure why

i did 2 miles of intervals and then 2 miles of inclines. Nice and sweaty

Home for a shower and off to run some errands! It was time to get things checked off the TO DO LIST and find a brown dress for my halloween costume!

Target for groceries and odds and ends. I picked out a wedding card.


This weekend, my son will be going to a wedding for his uncle on his dad’s side. I have been very emotional, crying at songs and for no reasons what so ever. This may seem weird. You might think- Kristen. You guys aren’t together. Why would you so emotonal.

Well. These people were at one time going to be my family. I gave them my heart. And when you break up with someone, you also lose their family. So when events like this come up, my heart still says- You should be there, but you’re not.

Its very hard for me, and probably will be for some time to come (yes we have been separated for 2 years, but tried again this summer)

ANYWHO. today I also found out that Ian (my son’s dad) will be taking a girl with him to the wedding. But hey. I only cried about three times today- thats progress haha

so picking out a wedding card was hard. I think I stood there for 5 minutes before I even looked

 I eventually got one, hit up Marshalls, Goodwill, Kohls, Bed Bath and Beyond, and finally Walmart. Where I found my halloween dress for 9 BUCKS!

I also found a fuel belt for 7 bucks at Marshalls!!!!!!!!

 I was so excited! And then I munched on the whole bag of this!

Of course dinner was the highlight of the day with acorn squash. recipe to come tomorrow!

 So. I didn’t eat AS MUCH as I could have, but I did ok. But for dinner I wanted a glass of wine (just one of the days)

Well….I don’t have a bottle opener. BUMMER!


But dont worry, I found another bottle

 And then I spilled my glass……

Insert  deep breath, and a refill (of more wine haha)

My day started off by working 7-1130 in the NICU. I picked up four hours from another nurse (who was out the night before). It was actually a really great and fast day. I could get use to four hr days haha

I had colby cheese and a hard boiled egg when I got there. And then at 1030 oatmeal

When I got home. I ate a ton. mostly handfuls of popcorn. How did that stuff get into my parents house!

Then my son, brother, his girlfriend, and my dad headed to my house to work on the walls!

since it was one already, and my “workers” (dad and brother) werent there yet. We had lunch!

Mini house tour

After working on the kitchen. Cutting the grass (yup I did it!) and a few other odds and ends. It was time for a SHOWER!!!! and dinner!


I had the fugi apple salad and black bean soup. I also tried my dads salad, but Ill stick with fugi.

I also had 2 dove chocolates, a chocolate pudding + fiber one cereal. And of course sprinkles!

I didnt get a workout in today. I was going to go to the gym after working this morning, but my left knee and ankle are hurting. Im not sure why. Is it the extra weight I am carrying? I need new shoes? The extra treadmill workouts? Bad running style?

Baby Food

Today I feel a MILLION times better (thanks to the pain meds and antibiotics) I dont think medicine fixes everything but OH BOY do I feel better. But the pain meds made me really tired and I was also very nauseous so my food options were very plain

Breakfast: yogurt and only 1/2 a bowl of cereal. I COULDNT finish it. Now you know Im not feeling well right?!?! haha

Then I went back to bed till 11:30. Again you know Im not feeling well since I usually cant sleep past 9 or 10

Lunch was oatmeal, with a big spoonful of better than peanut butter (that the oats made disappear haha)

Then I picked my son up from school, and had a grilled cheese sandwich with TONS of chips. I was so happy to eat!

Dinner was another meal Im not use to, pizza and then ice cream for dessert.  My mouth feels alittle better-I hope I can make it to work tomorrow- not taking the pain meds.

After school, my son decided to set up a “table” with his chair. He then got his piggy bank out, and said he wanted to share his money with the poor. He said they can bring $ in to their school.

-When I became a NICU nurse, I started walking and raising money for March for Babies.

Chicago and Back

This past weekend, I went with Erin (my cousin) and Laurie (my friend) to visit Jill (my cousin and best friend). We had a blast! but unfortuantly I dont have many “people” pictures…..darn

When we first arrived, my cousin showed us her cute dogs trick.

When she tries to leave, Louie will get into ANY bag even if its the size of a pencil bag!

We didnt get to chicago till about 10. So we had some snacks on the way down (can you believe I got trail mix…..

Then we snacked on some guacamole before heading to bed.

In the morning we went on a run. An easy 8 mile run. It was rough! but beautiful. We ran right by the lake.

Before the run, I had oatmeal, banana, and PB (that I brought with me)


 I havent run outside (only on the treadmill) and the 33 degree weather did not agree with my lungs. But I finished! Then I took a LONG shower and apparently I looked like a turtle….or so I was told haha

For “lunch” we just munched on apples and some munchies. We then went SHOPPING!!! I didnt get anything, but it was still a good time. Except for seeing this…..(haha just kidding, alittle)

I REALLY wanted to get this….I should have


Then we got margaritas and mexican! And home for some wine!

In bed around 1230, after watching Pretty Women. Awesome movie!

My legs were KILLING me. You would think Ive learned to stretch after running!

– tomorrow I will blog about IKEA. It deserves its own blog dont ya think? haha
