Healthy Kidney: Pancakes

I have been making a list of things I want to include in my Healthy Living, Healthy Kidney. I will really say, “Oh. my kidney wouldn’t like that” haha. It makes me realize the decision I was making, and also makes me laugh. Laughter is always the best medicine!

So far my list:

  • Moving my body
  • Getting to a healthy weight
  • Eating clean
  • Bonding with Andrew
  • Appreciate my family
  • Make time for friends
  • Scrapbook and crafts
  • Absorb and Spread Positive Energy
  • Unplug more

In no particular order of course. And I know I will add to it, but I really just want to be a whole person. I will grow and develop, and I’m sure I will hit many bumps in the road, but I will get back to it. I might need to post this on the fridge 🙂

Now to the pancakes! I want to eat healthy, but I also was getting bored of eggs and bacon. So pancakes it is!

These were super easy! I microwaved the sweet potato for a few minutes before, then mix, put on the skillet, flip, and enjoy!

I put some grass fed butter and maple syrup on top. DELICIOUS! You could also add banana to the mix. Or on top with some almond butter. Lots of options

Got a little TOO busy, time for pancakes

So I MAY have gotten alittle too busy, alittle too stressed out. So you know what that means….

Yep. Not feeling so hot today. I woke up not feeling 100%

This morning, I didn’t want eggs and bacon. Since I wasn’t feeling good, I wanted some comfort food and that ALWAYS means pancakes.

I went to my handy dandy pinterest, and found this recipe for paleo coconut flour pancakes. I was alittle skeptical because the ingredients were pretty simple, but don’t let that fool you. They were amazing! I added some scrambled eggs, and bacon

Today, I had a lot planned. workout at the gym. papers. bills. etc etc. Instead, I am drinking coffee in bed.

Checking emails, relaxing, and watching The Incredibles. I want to be able to breath tomorrow when I have my MRI. Everyone say alittle prayer around 6am that they find fat when they scan that darn mass. haha

Question for you:

Do you workout when you are sick?

-Usually I do, but the class I take, I usually can’t breath/move when I feel great, so I knew that I wouldn’t be able to push it, and then I would get frustrated. it would probably also not help my body heal, and we need that!

Andrew’s first healthy meal

Andrew and I had the BEST conversation this morning before he went to school.

rewind a bit.... For probably a year, I have noticed that not only do I have belly issues to carbs/sugary foods, but Andrew does as well. We have talked many times about how when is belly hurts, it might have been from the whole pizza he ate at his dad’s. (maybe!?!? haha)

So this morning, we talked about trying for ONE week ALL healthy foods. No junk food because he even says how he is addicted to junk food. And he brought this up himself! What a smart 8 year old! (I may be bias)

Tonight at dinner, we started and he ate everything! I was a cooking machine! (you can tell by my overflowing sink haha)

First, we baked chicken legs.

I just put coconut oil on the albumin foil, sprinkled with salt and pepper, and baked at 425 degrees for about 30-40 min

Easy Peasy.

Next, was cauliflower mashed potatoes! He LOVED Them!

And last, but not least, we made paleo cookie dough truffle shuffles

SOOO it wasn’t his FIRST healthy meal, but it is a great start to a WEEK of healthy foods. I was SO happy! Like jumping up and down that he ate everything plus some blueberries. I am ALWAYS up for more recipes to try! Thank you pinterest! haha

30 before 29: Week 2

Another week to lose 30 before July 16th. This week my brother and dad jumped on board to our weight lose challenge! I hope that we continue this forever! I love that I have others to report to, and I really want to win! (we are a bit competitive)

Measurements: Lost 2 1/2 lbs

Week 1: 0 lost

Week 2: – 2 1/2

Nutrition:  AWESOME!

This week I got rid of my cookie addiction! (I put them in the freezer. out of sight. out of mind) I even got my carbs under 60! Most days were around 50. I was SOOO happy. I am really impressed with this, even if I didn’t lose. Last week I was having a hard time.

Workouts: eek.

This week was not the best, because of work.But the end of the week defiantly was getting better.

Saturday: 12 hour shift

Sunday: off day

Monday:  12 hour shift

Tuesday: 12 hour shift

Wednesday: 12 hour shift

Thursday: 30 min bike + 15 min run on the treadmill

My goal was to workout 3 days a week. This week because of work it didn’t happen. but even though I only worked out 3 days (I have spin class also planned for saturday) I still lost weight! Shows just how much your diet is a big deal! I also walked A TON at work.

Sleep quality and duration: Pretty good

Considering I slept at my parents for three nights, I was sleeping really well. I had some hard days at work, so by 8pm I could barely keep my eyes open. I listened, and headed to bed.

How I was feeling: Worried and happy

I know it is weird to feel both ways, but at work I had A LOT of stress. I was worried about patient’s and other nurses. Then on Thursday, my first day off, I felt relaxed and happy. I got so much done,  got a great workout at the gym, and some downtime for myself. All these things make a happy Kristen haha

Things I did well: Dealing with the stress at work, the winter weather, and being away from home for three days

Things I need to work on: workouts and meal planning

(last week was Getting back to low carbs. I accomplished that!)

Christmas Eve 2013

Christmas Eve was celebrated on the 21st here in our house. My brothers, sister in law, future sister in law, mom, dad, neice, nephews, and Andrew all met at my parents house for a night of lots of food and presents.

The day started out with a messy kitchen, while making some yummy treats

For dinner I made: Paleo sweet potato casserole, paleo dinner rolls, and for the first time paleo pumpkin pie 🙂

When we arrived, no one was sure where we would sit because of all the presents! My mom really over did it this year. There are also gifts for my parents in there as well

But first, it was time to eat!

There were so many tasty things, but I think the shrimp was just the best. I also enjoyed a nice glass of wine

It was really a great night with the family. what was even better was that we didn’t have to rush anywhere after or before since we celebrated over the weekend. Merry Christmas 🙂
