Tuesday things to share

Hi everyone! I hope your week is going well. I have been working the past two days, and am ready for three days off after this. I have been checking all my favorite blogs, and I found a few things I wanted to share with you!

Andrew’s first healthy meal

Andrew and I had the BEST conversation this morning before he went to school.

rewind a bit.... For probably a year, I have noticed that not only do I have belly issues to carbs/sugary foods, but Andrew does as well. We have talked many times about how when is belly hurts, it might have been from the whole pizza he ate at his dad’s. (maybe!?!? haha)

So this morning, we talked about trying for ONE week ALL healthy foods. No junk food because he even says how he is addicted to junk food. And he brought this up himself! What a smart 8 year old! (I may be bias)

Tonight at dinner, we started and he ate everything! I was a cooking machine! (you can tell by my overflowing sink haha)

First, we baked chicken legs.

I just put coconut oil on the albumin foil, sprinkled with salt and pepper, and baked at 425 degrees for about 30-40 min

Easy Peasy.

Next, was cauliflower mashed potatoes! He LOVED Them!

And last, but not least, we made paleo cookie dough truffle shuffles

SOOO it wasn’t his FIRST healthy meal, but it is a great start to a WEEK of healthy foods. I was SO happy! Like jumping up and down that he ate everything plus some blueberries. I am ALWAYS up for more recipes to try! Thank you pinterest! haha

30 before 29: Week 2

Another week to lose 30 before July 16th. This week my brother and dad jumped on board to our weight lose challenge! I hope that we continue this forever! I love that I have others to report to, and I really want to win! (we are a bit competitive)

Measurements: Lost 2 1/2 lbs

Week 1: 0 lost

Week 2: – 2 1/2

Nutrition:  AWESOME!

This week I got rid of my cookie addiction! (I put them in the freezer. out of sight. out of mind) I even got my carbs under 60! Most days were around 50. I was SOOO happy. I am really impressed with this, even if I didn’t lose. Last week I was having a hard time.

Workouts: eek.

This week was not the best, because of work.But the end of the week defiantly was getting better.

Saturday: 12 hour shift

Sunday: off day

Monday:  12 hour shift

Tuesday: 12 hour shift

Wednesday: 12 hour shift

Thursday: 30 min bike + 15 min run on the treadmill

My goal was to workout 3 days a week. This week because of work it didn’t happen. but even though I only worked out 3 days (I have spin class also planned for saturday) I still lost weight! Shows just how much your diet is a big deal! I also walked A TON at work.

Sleep quality and duration: Pretty good

Considering I slept at my parents for three nights, I was sleeping really well. I had some hard days at work, so by 8pm I could barely keep my eyes open. I listened, and headed to bed.

How I was feeling: Worried and happy

I know it is weird to feel both ways, but at work I had A LOT of stress. I was worried about patient’s and other nurses. Then on Thursday, my first day off, I felt relaxed and happy. I got so much done,  got a great workout at the gym, and some downtime for myself. All these things make a happy Kristen haha

Things I did well: Dealing with the stress at work, the winter weather, and being away from home for three days

Things I need to work on: workouts and meal planning

(last week was Getting back to low carbs. I accomplished that!)

Christmas Eve 2013

Christmas Eve was celebrated on the 21st here in our house. My brothers, sister in law, future sister in law, mom, dad, neice, nephews, and Andrew all met at my parents house for a night of lots of food and presents.

The day started out with a messy kitchen, while making some yummy treats

For dinner I made: Paleo sweet potato casserole, paleo dinner rolls, and for the first time paleo pumpkin pie 🙂

When we arrived, no one was sure where we would sit because of all the presents! My mom really over did it this year. There are also gifts for my parents in there as well

But first, it was time to eat!

There were so many tasty things, but I think the shrimp was just the best. I also enjoyed a nice glass of wine

It was really a great night with the family. what was even better was that we didn’t have to rush anywhere after or before since we celebrated over the weekend. Merry Christmas 🙂

Paleo Cookie Dough

My older brother celebrated his 31st birthday this past week with the whole family. We had LOTS of food, and of course cake and ice cream. I decided to pass, and headed home looking for something sweet. I googled, looked on pinterest, and I found some great recipes (see below) but I decided on cookie dough

Paleo Cookie Dough

Ingredients:

  • 1 1/2 cup almond flour
  • 1/2 tsp salt
  • 1/8 cup honey
  • 1/8 cup pure syrup
  •  1/2 tsp vanilla
  • 1/4 cup MELTED coconut oil
  • 1/2 cup 90% chocolate

Directions:

1.) Mix all ingredients

2.) EAT

It doesn’t get any easier than that!

Trying Oatless Oatmeal

The other morning, I woke up craving oatmeal. I know that with my tummy, I can’t eat oats. So instead, I tried this recipe

Lots of different nuts, just chopped up almonds, pecans, and sunflower seeds.

I tried to add almond butter, maple syrup, cinnamon, ANYTHING

Unfortunately, I just wasn’t feeling this type of “oatless” oatmeal. Then I thought, that maybe my head cold was the problem haha. I got a starbucks coffee, and it tasted a bit different, so my taste buds must be off.

I will definitely try this again in a few days, once I can smell and taste again 🙂

Sweet Potato Casserole

I hope everyone is having a great Thanksgiving. I will be sharing the day with my NICU family, and then heading home to see some of the family. Each year we all bring in something to share together and I wrote down sweet potatoes 🙂

Sweet Potato Casserole

Ingredients:

Sweet Potatoes                                                                                               
      4 large sweet potatoes
      ½ cup canned coconut milk
      1 Tbsp. coconut oil
      1-2 Tbsp. maple syrup
      1 tsp cinnamon
      ½ tsp nutmeg
      juice of half an orange
 
Pecan Topping
¾ cup chopped raw pecans
1 tsp cinnamon
1 Tbsp maple syrup
1 tsp melted coconut oil
 
Directions:
1.) Bowl large pot of water. Preheat oven to 350 degrees. While the water boils, peel and dice potatoes into chunks.
2.) Place sweet potatoes in boiling water, and boil till you can stick a fork in them
3.) Drain water. Place rest of ingredients in pot with potatoes. Blend with hand mixer.
4.) Place in oven safe dish, then top with pecan topping.

UPDATE: After celebrating with my NICU, I have to say this sweet potatoes are AWESOME!!!!!!! I also ended up drizzling grass fed butter on top, I think it was the best part!

Weekly Workouts

I was feeling great this week! The workouts were tough and I lost 2lbs! But I know that the workouts were only a part of it, it was the eats. I have been tracking my carbs on sparkpeople.com and it makes a HUGE difference.

Sunday: Jumping at sky zone 🙂

Monday: 12 hour shift + 40 min bike

Tuesday: 12 hr shift

Wednesday: 35min ellpitical + arm workout

Thursday: 60 min kickboxing class (I was a red sweaty mess~!)

Friday: 12 hour shift

Saturday: 1 hour spin class

I have also been looking for new recipes so I don’t get bored. Like the paleo pumpkin cake and the protein version!

What I Ate Wednesday: Recipe modified

I usually talk about the food I eat on Wednesday, to follow along with Peas and Crayons and lots of other bloggers, but today, I will show you pictures of things I ate and then get right to the good stuff. A MODIFIED DESSERT RECIPE.

so that is the NOT exciting part. After the pumpkin cake mug recipe that I found, I realized the coconut flour + the honey sometimes put me way over my carbs. (im trying to eat less carbs. My body loves carbs=my body gains weight when I eat them)

Anywho, so I wanted to try something that wouldn’t have lots of carbs, AND would still be tasty. I basically just substituted a different ingredient.

Protein Pumpkin Cake for One

Ingredients:

-3tbsp vanilla protein powder

-3tbsp canned pumpkin

-1 egg

-2tbsp butter

-1tbsp honey

-cinnamon + pumpkin pie spice

Directions:

1.) mix wet and then dry ingredients

2.) microwave for 2 minutes

3.)ENJOY!

New recipe + Elf 4 Health

You. Have. To. Try. This.

After a 12 hour shift, a trip to the gym, and a small dinner, I needed something sweet. I googled paleo cake desserts. I first found this cookie dough in a mug (I swear this is for another day!)

When I found the pumpkin cake, I knew I found a winner!! And it was really easy

PALEO PUMPKIN CAKE

Ingredients:

  • 3 tbsp of coconut flour
  • 2 tbsp of butter
  • 1 egg
  • 3 tbsp of pumpkin puree
  • 1/2 tsp cinnamon
  • 1/2 tsp of ground nutmeg
  • 2 tbs of honey
  • 1/2 tsp of baking powder

Directions:

  1. Place wet ingredients in mug, then dry ingredients.
  2. Mix!
  3. Heat in the microwave for 2 minutes
  4. Let cool and Enjoy 🙂
