Apple Cinnamon Paleo Pancakes

For the first time, in a long time, Andrew and I were able to make a good breakfast. Not even that, a great breakfast!


Whenever I have the time, and I want a new recipe, I always go to pinterest. And this time, I found a good one. I just modified it a bit

Apple Cinnamon Pale Pancakes


  • 1/2 cup almond meal/flour
  • 1/4 cup tapioca flour
  • 1/3 cup coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2tbsp cinnamon
  • 4 eggs
  • 1/2 full fat coconut cream
  • 1 tsp vanilla
  • 2 medium apples
  • 1tbsp grassfed butter
  • cinnamon


1.)Mix the dry ingredients. and set aside

2.) In a medium ball, whisk eggs

3.) Mix rest of the ingredients with the eggs.

4.) Mix wet ingredients into dry

5.) Cut and dice apple. Place in bowl with butter and cinnamon. Heat in microwave for 2 minutes.

6.) Fold apples into mix.

7.) Let sit for 5 minutes. Add more tapioca flour or water depending on consistency.

8.) Cook on skillet

9.) Top with butter and maple syrup.


Easy as that! and super delicious. Andrew loves them as well. You can find almond flour at trader joes or online. Also if yoi dont have coconut flour or tapioca flour, jist use almond for the whole thing

What I ate Wednesday

Andrew and I started out with a quick breakfast


This pancake has 2 eggs, 1 banana, 1/2 scoop protein powder, cinnamon, and PB on top. It was delicious and held off hunger through the gym, and bike ride.


Anyone else think it looks like a heart?!?! I swear it wasn’t on purpose

On the way out the door to work on the yard, I ate 2 cheese sticks


Lunch (FINALLY) was at 1pm when Andrew got out of camp.


Midday snack: yoplait greek yogurt, chia seeds, and a few blueberries


Dinner: meatballs, carrot sticks, and peppers


Man I was tired and didn’t have a single bit of energy to find something excited for dinner. But this hit the spot.


Dessert after Andrew’s baseball game. These skinny cow ice cream bars are amazing.

Pumpkin Oat Pancake

Pumpkin Oat Pancakes:


1/2 c oats

1 egg

1/4 cup pumpkin

splash of soy milk

cinnamon (to taste)


Peanut butter

banana (or any fruit)

agave nectar (syrup and honey would work too!)


  • 1.)  Mix all ingredients in a bowl


  • 2.) Spray small skillet  and heat on medium to high heat
  • 3.) Spread mixture evenly on skillet
  • 4.) once brown on one side, FLIP!
  • 5.) Gather toppings (I love PB, banana, and agave nectar)


  • ENJOY!


I know I have made many different types of pancakes……

Hollie’s “Krissy Nutcakes” (named after me, Im just THAT lucky haha), blueberry banana pancakes, sprinkle pancakes, Chocolate protein pancakes, pumpkin pancakes, and heart pancakes. It may SEEEMMM that im obsessed with pancakes….Im ok with that. haha

But the pumpkin oat pancake is one of my favorites!

This is how the birthday boy and I started our morning! (well after sprinkle pancakes of course haha)


Rewind…..Six years ago…..

I had found out I was having a boy quite early, and I was so excited!

my due date of June 4th came and went…….June 5th. June 6th. June 7th. June 8th.

Each day I woke up READY for this big boy to arrive. I was HUGE!

On Friday June 9th, I had a doctors appointment in the morning. While I was there, my son started having heart rate slowings.

At first they told me if I didnt have my son by Monday, I would be induced then. I thought “ok. Ill go home and get everything finished packed up for the hospital”. Well then they came back in, and told me to head straight to the hospital to be induced. I was like “right now???” haha

After seven hours of being induced ( which wasn’t much fun). A WHOLE group of doctors arrived to inform me that my son’s heart rate slowings were increasing and getting worse. They would have to go in and deliever him by csection, otherwise he wouldnt make it.

Luckily, I had an epidural a few hours before, so I dont remember them telling me this.

At 7:42 my beautiful baby boy was born.

He was 9lbs 6oz!!!!!!


That day was such a special day. And I was able to hold him and love on him for the past 6 yrs.

And I have loved every minute of it

…..well except for potty training

I am so thank for this lil fellow in my life. I hope to remember to be thankful each day that I do have him.
