Weekend o’ fun

Andrew and I had a jam packed weekend o’ fun!

Andrew had requested pancakes for breakfast, so I whipped up some paleo pumpkin pancakes


(not as good as the apple, but you can’t go wrong with pumpkin!)

Next up was the grocery store, and then to some estate sales with my sister in law.


I picked up this small table for Andrews room(to paint), some tools for the house, small container of stain,  and then this coat for $4!


It needs to be dry cleaned, but I have been looking for a coat like that, and they go for $80 bucks at kohls!

After a quick lunch, and 30 minute workout with p90x3, we decorated the house.

This year we were definitely behind on the decorations, but it turned out really cute. now just a nose a mouth for the front door 😉

After running around the house, cleaning and putting things away, along with cooking, it was time for a bon fire with some of my friends.


It was such a nice night out. We had pulled pork, salsa and chips, and smores. Lots of eating!



I love that weekends can start with a great breakfast. (when I’m not working… )

Andrew and I then went to church. I then did one of my favorite p90x3 workouts.


After that, it was lots of laundry, dishes, cooking, and cleaning. And baseball out front with Andrew since it is in the 80s here! After that we headed to my parents for dinner. My sister in law made this amazing cake!


It was REALLY delicious too! There has been a lot going on in the family, so we haven’t had many family dinners, and this one was needed. There is A LOT going on this week, but more on that later….

Healthy Kidney: Pancakes

I have been making a list of things I want to include in my Healthy Living, Healthy Kidney. I will really say, “Oh. my kidney wouldn’t like that” haha. It makes me realize the decision I was making, and also makes me laugh. Laughter is always the best medicine!

So far my list:

  • Moving my body
  • Getting to a healthy weight
  • Eating clean
  • Bonding with Andrew
  • Appreciate my family
  • Make time for friends
  • Scrapbook and crafts
  • Absorb and Spread Positive Energy
  • Unplug more

In no particular order of course. And I know I will add to it, but I really just want to be a whole person. I will grow and develop, and I’m sure I will hit many bumps in the road, but I will get back to it. I might need to post this on the fridge 🙂


Now to the pancakes! I want to eat healthy, but I also was getting bored of eggs and bacon. So pancakes it is!



These were super easy! I microwaved the sweet potato for a few minutes before, then mix, put on the skillet, flip, and enjoy!

I put some grass fed butter and maple syrup on top. DELICIOUS! You could also add banana to the mix. Or on top with some almond butter. Lots of options

Weekend Breakfast

This breakfast was AMAZING and the pancakes were the hit of the whole thing. YOU. MUST. TRY. THESE!

I used my smart stick that I got for Christmas. I didn’t want to get out the BIG food processor.


It definitely worked!

After mixing, it was time to start cooking!


Like I said, You have to try them!


I found the recipe here, but of course made a few changes 🙂


  • 2 cup almond flour
  • 1 banana
  • 4 eggs
  • 2/3 cup almond milk
  • 1 tsp baking soda
  • pinch of salt
  • 2tbsp coconut oil


1.) Mix flour, banana, eggs, and milk.

2.) Add baking soda, and salt.

3.) Heat skillet with coconut oil, and pour batter

4.) Flip then enjoy!

The stomach bug has officially struck  again. First me, then my dad, and now Andrew. Last night was ROUGH. He was up every 20 minutes in the bathroom. I think we had one 2 hour stretch and that was it. I was exhausted!

I headed to target to get 7up, yogurt, ice cream, raisin bread, and gatorade. (all the things needed for tummy issues! haha) Thank goodness there is a starbucks IN target!


(Kris is actually what my grandma calls me, the lady must have known haha)

Since 6am, Andrew has been feeling MUCH better. Thankfully because I had to QUICKLY clean the house for a 9am appointment to get my house reappraised.


Not too shabby.

There is a big snow/ice storm here, so Andrew’s school has been called off.


So we are watching cartoons and relaxing. While I catch up, and get some laughs from facebook


And take lots of pictures of the storm

Almond Flour pancakes

Almond Flour Pancakes


-3 bananas

-3 eggs

– 1/4 cup almond butter (I used PB)

-1/4 cup almond meal/flour

-1/2 tsp baking powder

– 1/2 tsp vanilla extract


1.) Mix all ingredients in food processor

2.) Heat skillet w/ olive oil

3.) make pancakes and enjoy!

This recipe I found on Angie’s site (and really wanted to name them Angie’s pancakes, because thats how I know them.) But they are originally from carrotsncake. So I didn’t want to hurt anyone’s feelings, so they are now Peanut Pancakes….so boring hahaha

Cardinals photo shoot

Today started with an amazing pancake recipe, thanks to Angela! Recipe to come tomorrow 🙂

Then it was time for the gym. I went w/ 7 miles on the list. I really didn’t want to, but I wanted to make my training buddies proud, so I stuck with it. I didn’t go extremely fast but I did finish! (and trust me, I wanted to stop at 4, 5, and 6 miles haha)

The day concluded with the Cardinals game 🙂

Only 103 degrees at 7pm. No big deal

We stayed cool with ice cream

Windy City

Today started off w/ twin pancakes 🙂

Andrew had blueberry

and I had banana and agave nectar, w/ a side of scrambled eggs

The reason Andrew and I had time for pancakes, was because Andrew had a dentist appointment 😦

It was nice to not have to RUSH RUSH RUSH in the morning. He then went off to school, while I made a million phone calls and headed to the gym. I was going to run ouside, but the wind was crazy here (it blew down tree branches and the libraries fence!) I was afraid I would blow away! haha

I watched What Not to Wear while running/walking on the treadmill for an hour!!! I haven’t been able to do that in a LONG time! haha. I’m thankful for that show

I also racked leaves in the backyard (which just blew all over the place) and read my new book (after taking a shower)

But first I needed some grub!!! Homemade pizza, chobani yogurt w/ some chocolate granola while watching Ellen

TIme to grab a coffee, pick Andrew up from school, and headed to the park for an hour.

Then I made a new recipe!! Pork tenderloin w/ blueberry sauce and green beans. Even Andrew ate this!! (recipe to come tomorrow!)

And we ended the day, by getting frozen yogurt w/ my parents. It was nice to talk w/ them about everything that is going on

Yesterday, Andrew had to stay home from school for a temperature, sore throat, and runny nose. He also went to the doctor. Negative for strep and the flu (but you know how that went before…..)

Today, we are home. And all I wanted to do was run outside since it in the 60s outside!!!!! Instead, we are stuck laying around. (I can’t take us being sick all the time!!!!)

We did make a trip out to Trader Joe’s for some grocery. With the start of Lent, I needed some new kitchen items (another post on this later!)

Before heading to the grocery store, I planned our meals! First, I printed off a bunch new recipes!

And picked a few for the next few nights.

I can’t wait to use all my new items 🙂 

It was then time for lunch. Turkey sandwich, cucumber, and slice of colby cheese.

I am now in the process of making a new dessert! And then I think its nap time haha

More pancakes!

Happy President’s Day everyone! Luckily, Andrew was off school today. I worked all weekend, and didn’t get to see him much 😦 So today we had a blast!

Well, first we started w/ some errands, which ended w/ a surprise for him!

A basketball hoop! His grandparents ,on his dad’s side, decided since Andrew loved basketball, it was time for an earlier birthday present. We just had to pick it up. Now…..we my dad and brother are going to put it together haha

I forgot this morning started w/ a brand new pancake recipe – DELICIOUS!


I must have been feeling creative, because dinner was also a new recipe! I will have those tomorrow!

While Andrew was at a birthday party, I made it to the gym. It felt so good to get moving after a weekend of eating and work was kindof slow.

Unfortuantly, the evening ended w/ Andrew having a red, scratchy throat. Dear Lord, please don’t be strep throat.
