Apple Cinnamon Paleo Pancakes

For the first time, in a long time, Andrew and I were able to make a good breakfast. Not even that, a great breakfast!

Whenever I have the time, and I want a new recipe, I always go to pinterest. And this time, I found a good one. I just modified it a bit

Apple Cinnamon Pale Pancakes

Ingredients:

  • 1/2 cup almond meal/flour
  • 1/4 cup tapioca flour
  • 1/3 cup coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2tbsp cinnamon
  • 4 eggs
  • 1/2 full fat coconut cream
  • 1 tsp vanilla
  • 2 medium apples
  • 1tbsp grassfed butter
  • cinnamon

Directions:

1.)Mix the dry ingredients. and set aside

2.) In a medium ball, whisk eggs

3.) Mix rest of the ingredients with the eggs.

4.) Mix wet ingredients into dry

5.) Cut and dice apple. Place in bowl with butter and cinnamon. Heat in microwave for 2 minutes.

6.) Fold apples into mix.

7.) Let sit for 5 minutes. Add more tapioca flour or water depending on consistency.

8.) Cook on skillet

9.) Top with butter and maple syrup.

Easy as that! and super delicious. Andrew loves them as well. You can find almond flour at trader joes or online. Also if yoi dont have coconut flour or tapioca flour, jist use almond for the whole thing

Putting Pins to Use

The first step to “healthy living and not going stir crazy, was stopping by pinterest. You know all the pins you have, that you put on your boards, in hopes you will change your house, start working out, and making crazy amounts of sweets. Ok that might just be a few of my boards haha

I have attempted many pins, but mostly workouts, and so far they have been great! But in the past week or so, I have been really looking at my house. There are many projects I just haven’t tackled because of time, laziness, or no plan. So the past weeks, I have been planning. I am not wanting to overdue it, so I wanted to start with the linen closet.

I didn’t want to go crazy. I also knew that my energy level is still pretty low. I can do about one thing a day, that lasts an hour or two, and then I am done for the day. It is still crazy to me, but I am starting to be ok with it haha.

So I found these pictures, and had dreams of my house

those were just a few ideas I used to gather some supplies. I looked at target, and Walmart, but I really hit the jack pot at Hobby Lobby.

Everything was on sale, except for the large brown tote, but I used a 40% off for that.

Then it was time to assess the damage…

So everything came out, the closet was cleaned, and then it took time to figure out where everything would go.

I also have a plan to have a garage sale this summer, and at the same time,

I took many items out and put downstairs for that! Tackling two tasks at once 🙂

When all there is to do is PIN

With LOTS of time on my hands, I have been reading, walking, catching up shows, and of course checking out pinterest. Even though I don’t have much energy to cook, and I still can’t lift over 10 lbs, so many of these pins will be for the future 🙂

Weekly workouts

Those 12 hour shifts just get in my way! haha. Monday was alittle bit of a bust, but my body needed the rest after Saturday night. I always seem to pick it up at the end of the week.

I wanted to try new workouts, and MAN did I get just that! Of course I think my favorite was the cardio kickboxing class. I woke up on Friday feeling sore and satisfied that I worked some great leg muscles. I love waking up sore for a workout!

Sunday: 12 hour shift
Monday:  Just the squat challenge
Tuesday: 12 hour shift
Wednesday:  30 min ellptical + full body workout
Thursday: Cardio kickboxing
Friday: 30 min bike + arm workout + ab workout
Saturday: 12 hour shift

Wednesday was a New body workout that I found on pinterest board. I have found some great workouts on there for future use!

Busy Day Workouts

I love a good workout. But man, I need help to put them together. I have found some great ones on pinterest.

And I just found another!

Pinterest Workouts

After finding the crossfit workout on pinterest, I having been looking all over for new workouts!

I get bored easily. I also don’t work out nearly as hard as I should, so I find a workout and follow that- and it works!
