What I Ate Wednesday: Real food again

After days of being sick, my stomach is FINALLY coming back to normal!!! I am also trying to get away from carbs. When I am sick, the things I find appetizing are zup, ice cream, and bread. This bug was bad news, I even lost my appetite completely. And that is NOT like me haha

Tuesday Eats

I am back in the game! Even though all I wanted to do was stay in bed (and man I was grumpy today)

Instead, I headed to the gym for the 10:00 Muscle Works, but first I started with breakfast

Weather, boys, and food

Sorry I have taken a few days off. It has been a stressful week. I haven’t been sleeping

and I am now not going to Kansas with Mr Flowers (long sad story)

Anyway, I started the day with a warm breakfast: 2 eggs, 1/2 cup pumpkin, cinnamon, 1/2tsp baking powder, and PB2 on top

I then took a short nap before yoga.

It does a body good 🙂

Lunch was simple: meatballs and carrots. With cashews for a snack (and two cookies.eek)

Then this happened!!!

Tomorrow, I’m not expecting to lose any weight. With no sleep, stress, and not the best eating. But, tomorrow is a new day 🙂

Saturday started off w/ pancakes. These things are that good, since I have had them several times this week! I also made some coffee

We then went shopping w/ my mom. I got a few things. With two new pairs of workout pants- I think I was more excited about those!!!

I defiantly needed new shoes…those are going in the trash

Andrew got a few things too

We finally got home for lunch! I did have three PB girl scout cookies on the way home. So I was surprised when I was craving a salad for lunch!Spinach, blueberries, cranraisins, feta, almond slices, sunflower seeds, and chicken

After lunch, we laid low to Andrew’s friend came over. They had pepperoni pizza puffs, I had a pork tenderloin, cheese, and blueberry sauce sandwich

I also started a new book, and I even found Andrew upstairs reading. I hope we can keep this up!

 I stared Crossed, which is the second book after Matched. Im already 100 pages in!!

I dont know if you noticed, but I didn’t make it to the gym today. And it totally bothered me. I wa going to go first thing this morning (before shoppng) but it was nice just to eat breakfast and chill w/ Andrew. I thought after shopping, Andrew was going to go to a friend’s I could go then. Well, his friend ended up coming to our house around 5pm. And my gym only has hours for day from 8-12 on saturdays. Darn it.

Although Andrew and I did play basketball, I still really missed the gym. (I know. dont freak out haha). Hopefully tomorrow, Andrew can hang out w/ my mom and dad for an hour, so I can go. No day care hours tomorrow at my gym 😦

Anyway, just had to vent about lack of hours at the gym. Now time to get to my book and then bed. Goodnight!

Friday Movie Night

Happy Friday!

The past two days, Andrew has been off school. There has been so many sick kids in St Louis, the some schools closed!! This so they could clean the school (hope it works!!!) But isn’t that crazy?!?! I don’t remember school ever closing like this when I was a kid. (Lucky)

Anyway, Andrew and I started the morning w/ breakfast and the gym. I hit the treadmill, my legs were still sore from wednesday! (I need to start running longer distances- I have a half marathon in 5 or so weeks….EEEEKKKK

When I got home, I also made some different coffee. Can’t wait till tomorrow to try it again, and I’ll remember to get a picture…..haha

Andrew also had a friend over. They had homemade mini pizzas for lunch w/ apples

I had left over pork tenderloin, blueberry sauce, and green beans. DELLLLICOUSSSS. w/ a ton of granola and dates for dessert

I noticed some EXTREMELY ripe bananas. The perfect excuse to try a new recipe!!! (to come tomorrow!)

We had dinner w/ my mom and Andrew, and then Andrew and I got in our PJs and watched The Smurf Movie.

 It was really cute!  Now time for bed- Good night!

-A tornado touched down about 3 hours from here, and then today I heard Ohio had some pretty rough storms. I hope everyone is ok!

Pork Tenderloin w/ Blueberry Sauce

Pork Tenderloin w/ blueberry Sauce

serves: 4

Ingredients:

-1 1/4 lb pork tenderloin

-1/2 tsp sea salt

-1/2 tsp black pepper

– 3/4 lb green beans

– 1 tbs olic oil

– 1 1/2 cup blueberries

-1 tsp raw honey

– 1/4 c water

– 1/2 tsp thyme

Instructions:

1.) heat oven to 400 degrees

2.) Rub pork w/ salt and pepper. Bake for 25 minutes

3.) with 10 minutes left of to cook, remove pan from oven and spread green beans around port. Drizzle green beans w/ olive oil and place back in oven

4.) Head 1/2 tsp olive oil in saucpan on medium heat

5.) Add blueberries, honey, water, and thyme (the original recipe calls for apple cider vinegar instead of water)

6.) Cook until thickened

Even Andrew ate this and he is super picky! I didn’t even dip my tenderloin in kitchen (which I usually do) just the blueberry sauce- I was skeptical at first, but at the first bit- I was sold!!!!

Windy City

Today started off w/ twin pancakes 🙂

Andrew had blueberry

and I had banana and agave nectar, w/ a side of scrambled eggs

The reason Andrew and I had time for pancakes, was because Andrew had a dentist appointment 😦

It was nice to not have to RUSH RUSH RUSH in the morning. He then went off to school, while I made a million phone calls and headed to the gym. I was going to run ouside, but the wind was crazy here (it blew down tree branches and the libraries fence!) I was afraid I would blow away! haha

I watched What Not to Wear while running/walking on the treadmill for an hour!!! I haven’t been able to do that in a LONG time! haha. I’m thankful for that show

I also racked leaves in the backyard (which just blew all over the place) and read my new book (after taking a shower)

But first I needed some grub!!! Homemade pizza, chobani yogurt w/ some chocolate granola while watching Ellen

TIme to grab a coffee, pick Andrew up from school, and headed to the park for an hour.

Then I made a new recipe!! Pork tenderloin w/ blueberry sauce and green beans. Even Andrew ate this!! (recipe to come tomorrow!)

And we ended the day, by getting frozen yogurt w/ my parents. It was nice to talk w/ them about everything that is going on

now time for bed!!! goodnight!!

Justin the Elf arrives

Today was busy busy. Got a lot ton.

I was not feeling the gym AT ALL this morning. Time to run errands instead. First was walgreens for a return. My parents to look at the ads in the newspaper.

Target. I got WAY too much stuff.  A lot of xmas stuff and I am looking for CHEAP riding boots. I love these from target, but I cant find them and they don’t sell them online 😦

Also, tried Macy’s w/ no luck. But I did get Andrew a lot of xmas gifts so I guess it all worked out.

By the time I got home, it was time for lunch! Quick snack and then gym!

 The gym was ok . nothing special, but I should have worked out harder.

Shower and then got Andrew from school.

While making dinner, the kitchen was a diaster!

 Dinner was pork tenderloin w/ peppers and some cheese. A side of greek yogurt and granola and grapes

 Of course, our household got a visitor!

 Have you heard of this before? Well the kids name the Elf. And each night he goes to tell Santa if you were good or bad. Then he flies back and is found in a different spot. Then in the morning the kids have to find the new spot. You can make some pretty funny ones!

BLAHHHHHH and weigh in :-)

Today. I was not having it. I was exhausted and I had two kids, no exercise, and a lot of carbs.
Ok. So two of those I could have changed.

Early breakfast with my son at 7am. Good o bowl of cereal with blueberries, bananas, fiber one, total cereal, and soy milk

Then I just couldnt get it together. Just feeling worn down. And I couldnt get out of the funk.

Lunch was a repeat from yesterday with some watermelon

Dessert, was pudding, fiber one cereal, pecans, and some sprinkles to make it colorful haha

then a did a bit of snacking. French bread. Chocolate square.

But while my nephew was sleeping, my son and I played w/ the slip n slide. After my nephew got picked up, my son and I went to a birthday party. I had a small piece of cake, and no pizza.

When I got home, I made some shrimp, veggies, and rice. It was just what I needed. While watching Law and Order SVU

now Im ready for bed. It was just one of those days.
