A day in the Life

Recently, I have seen on blogs how they past their time throughout the day. This day WILL NOT be boring, I promise you. Andrew and I were more on the go today, then the past 7 days put together haha

Last night, I had it all mapped out 🙂 Yep, I’m Type A haha


6:55am Alarm goes off the first time, the for the next few minutes I lay in bed dreading before getting up

7:10 Breakfast with Andrew. Feed the cats. Make LOTS of coffee. And get ready for basketball

7:45 Arrive at Andrew’s basketball game where they practice, play, and WIN!


9:10 To the gym for a good sweaty rowing workout (will post tomorrow)

10:15 Back home for a quick shower and we both have a wardrobe change haha


11:00 Leave for the COLDEST tag football game EVER (I might have lost a toe haha)

12:45 Head home, where we attempt to warm up with hot chocolate and the heater!


2:00 Make some DELICIOUS chocolate chip blondies to take with us to my brother and future sister in law’s house

3:00 Wardrobe change #3! And we are off!

3:30 Helped address the wedding invitations for their wedding!

4:30 Time to roll to church and Andrew’s boy scout ceremony


4:45 HOPEFULLY arrive at church on time

9:00 Arrive home for the FINAL time. No more leaving, but we do have a final wardrobe change into pjs 🙂

Sweet Potato Casserole

I hope everyone is having a great Thanksgiving. I will be sharing the day with my NICU family, and then heading home to see some of the family. Each year we all bring in something to share together and I wrote down sweet potatoes 🙂


Sweet Potato Casserole


Sweet Potatoes                                                                                               
      4 large sweet potatoes
      ½ cup canned coconut milk
      1 Tbsp. coconut oil
      1-2 Tbsp. maple syrup
      1 tsp cinnamon
      ½ tsp nutmeg
      juice of half an orange
Pecan Topping
¾ cup chopped raw pecans
1 tsp cinnamon
1 Tbsp maple syrup
1 tsp melted coconut oil
1.) Bowl large pot of water. Preheat oven to 350 degrees. While the water boils, peel and dice potatoes into chunks.
2.) Place sweet potatoes in boiling water, and boil till you can stick a fork in them
3.) Drain water. Place rest of ingredients in pot with potatoes. Blend with hand mixer.
4.) Place in oven safe dish, then top with pecan topping.

UPDATE: After celebrating with my NICU, I have to say this sweet potatoes are AWESOME!!!!!!! I also ended up drizzling grass fed butter on top, I think it was the best part!

New recipe: protein almond pancake

I know i have been trying lots of new recipes,  and this one isn’t THAT different that than the banana pancake. But I basically woke up one morning WITHOUT BANANAS!!! It was a disaster haha

So I tried googling or just looking for a new recipe to try. I gave up, and made my own.

And this one is REALLY good and keeps me full for almost 5 hours!



Protein Almond Pancake


-2 eggs

-1 scoop vanilla protein powder

-1/2 cup pumpkin

-2 tbsp almond flour

-1 tbsp cinnamon

-1 tsp baking powder

-1 tbsp olive oil


-Mix all ingredients (except oil)

-Place skillet on medium heat

-Spray or place olive oil in skillet to heat up

-Place ingredients in skillet in shape of a pancake

-Flip after top starts to bubble

-Cook other side



I top mine with butter and a little almond butter. But the toppings are endless, like a banana if I had one! haha

Sometimes you just need an egg mcmuffin (paleo recipe)

After yesterdays huge success with the dinner rolls, and then the dessert, I knew I just needed to try something this morning.

And it is a KEEPER!


When I made the rolls yesterday, I also made some that were a little larger and flat. And they were the perfect size for an egg sandwich!

2 eggs + bacon + flat roll=DELICIOUSSSSSS


A great way to start the morning, and kept me full from 7am to noon!

What I ate Wednesday: Recipe

This week has been a bit crazy and busy, with work and bike riding! So today’s What I ate Wednesday is a recipe!

I made this for my brother and sister in law who are expecting twins anytime now! She is 36 wks on Friday and I CAN NOT wait to meet them!


Smoked Sausage, Potatoes, and Green Beans


  • 1 lb  green beans
  • 1 lb baby red potatoes
  • 1/2 lb smoked sausage links
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4-6 cups chicken broth
  • salt and pepper to taste


1.) Cut sausage links in 1 inch sections. Chop onion (and potatoes if they are too large)

2.) Place on ingredients in crockpot

3.) Cut for 5-6 hrs

4.) Enjoy!

Cinnamon cream cheese

I just have to share this SUPER easy recipe.

I was looking in the frig and looking for something sweet, but healthy. It was slim pickings.

Then I remembered that Tina at carrotsncake, made these. I didn’t have any laughing cow cinnamon cream cheese, so I made my own


Cinnamon Cream Cheese


-fat free cream cheese



-mix all together and enjoy!


You can either tip them in the cream cheese, or hollow out the middle of the strawberry and put the cream cheese in there!

So not a HUGE recipe discovery, but a delicious one!

Hiding in Meatloaf

When I discovered that I can hide veggies in Andrew’s my food, I was going to try it again!

Time for veggies in the meatloaf! (thanks to Tiffany!)

I actually made Andrew a taco, but still hide the veggies


He ate the whole thing without even asking a word!

I followed this recipe a little, but added my veggies

Veggie Hidden Meatloaf


  • 1lb beef
  • 4 cup chopped carrots and spinach
  • 1 egg
  • 1 tsp basil
  • 1tsp thyme
  • 1 tsp parsley


Preheat oven to 400 degrees

1.) Use food processor to chop carrots and spinach

2.) Add veggies to meat, egg, and spices

3.) Place in pan and bake for 35-40 minutes

There is a sauce on the website, I just added some ketchup 🙂
