Smart Stick Green Monster

The past couple of days I have had a HUGE craving for green smoothies (even with the snow. I know…strange..)

I have even made a few before, mostly with frozen blueberries

I now made something different

This time I used the smart stick!

Banana and PB Smoothie

Ingredients:

  • PB2
  • 1 banana
  • 2 cups of spinach
  • 1 scoop of vanilla protein

Directions:

Mix and drink!

Baked Chicken Wings

After the sinful crescent rolls, and lost of carbs while being sick, I decided I need to eat “real” food. I found this!

Crispy Baked Chicken Wings

Ingredients:

-2lbs chicken wing

-salt

-3tbsp hot sauce

-2 tbsp butter

Directions:

1.) Preheat oven to 450 degrees

2.) Boil a large pot on the stove. Season with salt

3.) Boil chicken for 7-8 min (I had to longer because mine were frozen). Remove to rack

4.) Place chicken on sheet and back for 30 min on one side, flip, 10 min on the other

5.) In a small sauce pan, heat hot sauce and butter. Toss with wings and serve!

Sinful Crescent Rolls

This week, my best friend has been carbs. My stomach wasn’t tolerating anything else. (today I finally tried salad!! My first “real” meal since Thursday- WAHOOO! And then my stomach decided to growl at me for hours)

So as a result, I dug in the back of the frig, and found these bad boys and used my handy dandy Pinterest

Tomorrow I hope my stomach will allow REAL food. Although, I don’t think I will be eating eggs for weeks to come haha

Week Two & raw cookie dough

After a few bumps this week, with all the candy/cookies/junk at work, I was able to come out untouched WAHOO!!!

Weigh in:

  • Week 1: lost 1 lb
  • Week 2: lost 1 lb!!!!!
  • Total: 2lbs

Even though it is only 2lbs, I have been feeling so good (still tired) but not so flabby (if you know what I mean)

Tonight as a celebration, I needed something sweet. I really really wanted to get ice cream or head out to get something. But I knew I could mix something up, and this recipe is super easy! (I found the recipe here, but I did change it a bit)

Raw Cookie Dough

Ingredients:

-3/4 c almond flour

-1tbsp coconut flour

-2 tbsp butter

-1 tbsp vanilla

-1 tbsp agave nectar

Chocolate chips

Directions:

Mix all ingredients and then roll together. ENJOY!

Preparing for the next 6 days….

I was lucky enough to have the past 7 days off! Working three 12 hour shifts can be really nice that way. But now, now I pay. haha. I have to work Thursday-Tuesday. It won’t be pretty.

But instead of worrying about it. I decided to make a BIG batch of stew

I added carrots, peas, green beans, and sweet potatoes to the beef stew. YUM!

So now, I just have to make it to Tuesday. And then Mr Flowers will be here- OFFICIALLY!!!!!!

Watermelon Ship

This is another pinterest project, that was SO easy. The website, also has about twenty other designs as well!

1.) Grab your watermelon and wash the outside.

2.) Then cut the top 1/3 off

3.) Next cut and/or scoop the inside out of the “ship”

4.) Then design however you wish!

We of course used an American flag and lego people, thanks to Andrew. We also bought swedish fish and put them on the blue towel

Spinach and Ricotta Stuffed Chicken

Spinach and Ricotta Stuffed Chicken

Ingredients:

-1 package chicken (I used chicken breasts)

– 1/2 cup part skim ricotta

– 1 package frozen chopped spinach

– 2 % shredded mozzarella (1/2- 3/4 cup)

– 3/4 cup seasoned bread crumbs

– 1 egg white

– 1 egg

salt, pepper, and garlic powder

Directions:

1.) Defrost spinach in microwave. squeeze out water

2.) Place in bowl w/ ricotta, salt, pepper, and garlic powder

3.) Add 1 egg white and stir

4.) In a separate bowl add one whole egg, salt and pepper, and beat

5.) Lightly coat egg in egg then breadcrumbs. Place in pan

6.) Put spinach mixture on top of chicken. Add shredded cheese and roll up and secure w/ toothpick

7.) Bake 350 degrees for 25-30minutes
