Tuesday things to share

Hi everyone! I hope your week is going well. I have been working the past two days, and am ready for three days off after this. I have been checking all my favorite blogs, and I found a few things I wanted to share with you!

Andrew’s first healthy meal

Andrew and I had the BEST conversation this morning before he went to school.

rewind a bit.... For probably a year, I have noticed that not only do I have belly issues to carbs/sugary foods, but Andrew does as well. We have talked many times about how when is belly hurts, it might have been from the whole pizza he ate at his dad’s. (maybe!?!? haha)

So this morning, we talked about trying for ONE week ALL healthy foods. No junk food because he even says how he is addicted to junk food. And he brought this up himself! What a smart 8 year old! (I may be bias)

Tonight at dinner, we started and he ate everything! I was a cooking machine! (you can tell by my overflowing sink haha)

First, we baked chicken legs.

I just put coconut oil on the albumin foil, sprinkled with salt and pepper, and baked at 425 degrees for about 30-40 min

Easy Peasy.

Next, was cauliflower mashed potatoes! He LOVED Them!

And last, but not least, we made paleo cookie dough truffle shuffles

SOOO it wasn’t his FIRST healthy meal, but it is a great start to a WEEK of healthy foods. I was SO happy! Like jumping up and down that he ate everything plus some blueberries. I am ALWAYS up for more recipes to try! Thank you pinterest! haha

I am taking a little break from the Michigan posts, to share some emails that I have received. Mostly recipes, a great workout, and a REALLY inspirational story about paleo. I know not everyone understands, follows, or gets all the hype, but I just thought I would share!

Bananas + paleo = awesome

Today in preparation for another vacation (thank goodness) I needed to use up some pretty ripe bananas, and banana bread ALWAYS in on my mind haha

Of course, I have tried a few recipes before:

But this one is a new one! I changed a few things, but otherwise… DELICIOUS!

Paleo Apple Muffins

On Saturday, I needed something sweet, but didn’t want to ruin my day of eating healthy. Luckily, I have a few recipes laying around for such occasions.

Paleo Apple Muffin

servings 12-14

Ingredients:

  • 2 1/4 cups almond meal
  • 4 eggs
  • 1 apple finely chopped
  • 1 banana
  • 1/4 cup coconut oil
  • 1/3 cup water
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon

Directions:

1.) Preheat oven 350 degrees

2.) Mash banana, chop apple, and mix with all the ingredients

3.) Fill muffin tins

4.) Bake for 15-20 min

I didn’t have enough almond meal, so I had to use tapioca flour.

I couldn’t tell a difference, they were delicious!

The stomach bug has officially struck  again. First me, then my dad, and now Andrew. Last night was ROUGH. He was up every 20 minutes in the bathroom. I think we had one 2 hour stretch and that was it. I was exhausted!

I headed to target to get 7up, yogurt, ice cream, raisin bread, and gatorade. (all the things needed for tummy issues! haha) Thank goodness there is a starbucks IN target!

Since 6am, Andrew has been feeling MUCH better. Thankfully because I had to QUICKLY clean the house for a 9am appointment to get my house reappraised.

There is a big snow/ice storm here, so Andrew’s school has been called off.

So we are watching cartoons and relaxing. While I catch up, and get some laughs from facebook

cauliflower pizza

I have seen the cauliflower pizza recipe around the blog world, I googled it and found these recipes.

It was super easy and really good.

Cauliflower Pizza

Ingredients:

  • Crust:
    2 cups shredded cauliflower
    1 egg
    1 cup finely shredded mozzarella cheese
    1 tsp dried oregano
    1/2 tsp garlic powder
    1/4 tsp saltTopping:
    1/2 cup piza sauce or marinara sauce
    1/2 cup finely shredded mozzarella cheese
    topping of choice

Directions:

1.) Preheat oven 450 degrees

2.) Blend the cauliflower (if watery, use a paper towel to dry)

3.) Mix cauliflower, spices, cheese, and egg

4.) Spray baking sheet with cooking spray

5.) Spread cauliflower mix (makes a 9inch pizza)

6.) Spray the “pizza” with spray

7.) Bake for 20 minutes until golden brown

8.) Take pizza out. Put on pizza sauce and toppings.

9.) Turn broiler on in the oven and insert pizza for 3-4 minutes till cheese melted

10.) ENJOY!

No it isn’t the same as REAL pizza, but if you have a pizza craving, THIS is the way to fill it!
