tracking eats for accountability

I have found the past few weeks I have been have lots of tummy issues.  Pains,  etc, all not good.  Well if you take a look at what I have been eating you can see why.  I have been working slot of extra 12hr shifts at work,  also not sleeping alot. Which leads to overeating and bad food choice for me.

When I first started this blog,  years ago on spark people.com, I was blogging my eats and workouts to keep myself accountable.  And let me tell you. Often really worked. So when I was complaining talking with Angela about my concerns,  she suggested we keep each other accountable By recording our eats on our blogs for a week. I know,  that when I have to report to Angela, I am going to eat better.  I dont want her to know about all the junk haha.

So I started early,  just to get the ball rolling. I also have a hard time remembering to take pictures of my food. This day I did two workouts (more on that later) so I have lots of proteins and eats

For example,  my first day I forgot to capture breakfast.  Oops.  I have eggs and bacon. So not exciting anyway

Lunch #1: stew meat with shredded cheese, snap peas,  and watermelon

Snack:  shrimp and roasted peanuts (random yet. And no peanuts are not paleo but are delicious)

So I felt pretty good about this day!

What I ate Wednesday: 12 hour shift

This week has defiantly been interesting. As of Wednesday, I have worked five 12 hour shifts in a row. I knew that i needed to be prepared for those few days, if I wanted to stay away from the junk food at work.

I first started off with a crockpot of stew

I also had leftover sausage, potato, and peppers baked in the over, and a rotisserie chicken from Sam’s. I have a few different things each week so I don’t get bored and eat the junk.

So this is how a 12 hour shift of food goes…….

Breakfast: Made at home. This week has been big on protein pancakes.

And they keep me full till 10:30! At that time, I have bacon (made at home), a mini morning glory muffin + almond butter

Around noon I usually have some cashews

2pm Is lunch time in the NICU world. I also have cucumbers, and dates for dessert

5pm another mini glory muffin OR apple with almond butter

8pm A small dinner. Basically something different than lunch. I have to keep it different!

This it is time to pack up for the next day, and hit the hay

-I had a rough day in the NICU and didn’t end up leaving till almost 10. (usually leave at 7:30!)

What I ate Wednesday

I woke up with no eggs and no bananas. So lucky for you guys, I have a new breakfast to show haha

Breakfast:  bacon, pear, and 2 morning glory muffins + almond butter

After grocery shopping, it was time for lunch. I was starving

Snack: tons of cashews (undocumented) and another morning glory muffin

Dinner: acorn squash + cinnamon + honey + pecans

It was light because of the over kill on the cashews

Breakfast: Egg/Banana Pancake (2 eggs + 1 banana + 1 scoop vanilla protein powder + cinnamon)

Snacks: a few string cheeses and turkey pepperoni

Dinner: Steak (thanks to my parents!) and strawberry salad with my favorite dressing

I know with the baby, there was probably a lot not documented. That seems to be a problem I had this week, I would mindless eat. More on that, hopefully tomorrow!

First run of the year

Yesterday, I decided to get my act together and track my food and workouts.

Breakfast: 2eggs, 1 egg white, with peppers and sausage. side of bacon

Gym time: 30 min on the bike, 30 min weights

Morning pick me up: coffee with whipping cream

Lunch: Leftover stew

Dessert: Using something new! (recipe on Monday)

Snack: Frozen Blueberry, spinach, protein powder, PB2 (1tbsp), and water (green monster with my smart stick!)

Well then. I worked out again. No joke. A few of the moms got together on a BEAUTIFUL 60 degree weather day for a run. My very first of the year. (again no joke)

After the half marathon last year, my knee and ankle were bothering me. I took some time off. Switched back to older shoes. And the 3 mile run was a success! No knee of ankle pain! I also got to catch up with other moms. I swear there is nothing like talking with another mom about your worries, concerns, or frustrations.

The weather, endorphins, and talk made me feel a MILLION times better

Preparing for the next 6 days….

I was lucky enough to have the past 7 days off! Working three 12 hour shifts can be really nice that way. But now, now I pay. haha. I have to work Thursday-Tuesday. It won’t be pretty.

But instead of worrying about it. I decided to make a BIG batch of stew

I added carrots, peas, green beans, and sweet potatoes to the beef stew. YUM!

So now, I just have to make it to Tuesday. And then Mr Flowers will be here- OFFICIALLY!!!!!!

Sweet Potato Stew

This past week, I have been trying to plan dinners. Usually, I go and grab stuff from the store (always from my list) but then 4pm rolls around, and I’m at a lose of what to make. Then we end up making/buying food that isn’t healthy, or that we didn’t need to buy since we have food in the frig!

I had a craving for stew. My grandma has the most amazing stew recipes. I wanted to use sweet potatoes, so I did a little searching and found this recipe. But I actually didn’t follow it. I just through everything together!

Ingredients:

-1 lb stew meat

-3 tbs flour

-salt and pepper

-2 cups small carrots

-1  cup frozen peas

-1 can fresh green beans

-2 sweet potatoes, cut in cubes

Directions:

1.) Cut stew meat into small cubes

2.) Flour meat, and then heat large pot with olive oil.

3.) Brown meat in hot oil.

4.) After browns, add carrots, sweet potatoes, green beans, peas, and I ended up adding corn too. Cover with water

5.) Simmer for an hour and a half

6.) ENJOY!
