For my last and final post for vacation (insert sad face), I wanted to share some of our favorites. Although, some might not make sense haha

The family and I were able to make A MILLION memories. I really did miss them all when we came home. It was all too quiet, but don’t worry, we will see each other in a bout 10 days haha

Besides getting sick with a 102.8 degree fever, and having to start antibiotics, it was a great trip. Although St Louis’ weather is in the 70s and really nice!

The one thing I will change would be to bring my bike. I didn’t get much exercise, and I was definitely feeling it when I got home. Although, my body probably appreciated the rest (just not the million M&Ms)

What is one thing or person you miss right now?

-Andrew is at the lake with his dad. He has been gone for 2 days. I think I missed him the night he left haha. Luckily, he will be back on Sunday! HIS BIRTHDAY!

First stop Mississippi

My family and I headed to Fort Morgan Alabama again this year, and I was BEYOND ready for this trip. I needed out of St. Louis. Bad.

The trip started on Friday after Andrew got out of school. His last day of second grade [insert tears]

From 4pm to 10:30 we were on the road. We finally crashed at a family member’s house of my sister in law

We didn’t catch much except sea weed. But Andrew caught the biggest thing…himself haha

We finally headed back and got on the road for the beach! But first we stopped by Ole Country Bakery

There are fresh breads, pastries, and sandwiches made by the  Mennonite workers. We grabbed sandwiches on the way. If you are EVER in Brooksville MS you MUST stop and grab donuts, sandwiches, and a pie to go or to eat in!!!

Back from the beach

WE ARE BACK!!!

After a 6Am wake up call, 12 hours of driving, 4 stops, the family is back  in St Louis

To say I’m happy to be back, would be a bit of a lie.

The vacation was amazing! And definitely what I needed

It will be nice to sleep in my own bed, and get back to healthy eating. But thats about it haha

Guest Post: Nikki from Life After Swimming

Hello from the beach! Here is one of my first guest posts, and it comes from Nikki at lifeafterswimming. Not only is Nikki teaching, coaching, and planning a wedding, she also has time to cook! Luckily she is sharing a great recipe with us! And only three ingredients, you can’t beat that!

Hey everyone! Thanks to Kristen, I’m here with a guest post for ya! I hope she’s having a great time, and I hope she’s taking a nice break from technology, too! A little break is good for the soul!

I’m here today to introduce you to my favorite cookie recipe as of late.  It’s probably the simplest recipe in the world, but it makes for a filling, low calorie treat!  And another plus is that it can be easily adapted to include a multitude of yummy tastes!  I’ve already posted it on my blog, but I wanted to share it with the rest of Kristen’s readers because this recipe is honestly the simplest recipe that is also satisfying!

Three ingredients is all it takes for a healthy, filling, delicious dessert.  A bonus: each cookie is roughly 50 calories!

Chocolate Chip Banana Cookies

  • 1 cup oats

  • 2 ripe bananas

  • 1/4 cup chocolate chips

Preheat oven to 350.  Mix all ingredients together well, spoon onto a greased baking sheet, and bake for 15 minutes.  The end.  Easy as pie (or cookies in this case…). I got 12 nice-sized cookies out of it.

The nice thing is that these can be modified simply.  You can switch out the chocolate chips for raisins, dried fruit, nuts, etc.  Or you can add a little bit of nut butter for a smoother taste!

Seriously, I encourage you to try these! They don’t really taste like a health cookies, and they are totally perfect for a little sweet tooth craving!

Beach Vacation Survey

Right now, I’m on the road!!! I can not express how much I have been looking forward to fresh air, and getting out of St Louis. I always feel rejuvenated after our beach vacation, now I just have a few hours standing between me and the gulf 🙂

Vacation Location

Following our 13 hour day of traveling, we finally arrived at our condo!

My mom found an amazing deal for a condo at the Gulf Shores Plantation.
