What I ate Wednesday

Another day of eats! Andrew and I were pretty low key since he was home sick with strep. Unfortuantly, I eat way more when I’m home bond and bored, but I didn’t do to bad.

Breakfast: Protein Pancake

(I need to find a new breakfast haha)

Lunch: 1/2 panera fuji salad + veggies

Snack: morning glory muffins

(times a million.)

Dinner: other 1/2 of salad + pieces of steak

I know it doesn’t look like it, but I really did eat a lot of those morning glory muffins. On top of that, I didn’t get a chance to workout since Andrew was sick. But I know tomorrow will be better.

Since Andrew isn’t feeling good (and his tonsils are so swollen they are almost touching) he had a nice treat of ice cream with chocolate chips

Hoping he feels better soon ❤

Question for you:

What do you order when you go to panera?

Any breakfast ideas?

Hiding in Meatloaf

When I discovered that I can hide veggies in Andrew’s my food, I was going to try it again!

Time for veggies in the meatloaf! (thanks to Tiffany!)

I actually made Andrew a taco, but still hide the veggies

He ate the whole thing without even asking a word!

I followed this recipe a little, but added my veggies

Veggie Hidden Meatloaf

  • 1lb beef
  • 4 cup chopped carrots and spinach
  • 1 egg
  • 1 tsp basil
  • 1tsp thyme
  • 1 tsp parsley

Preheat oven to 400 degrees

1.) Use food processor to chop carrots and spinach

2.) Add veggies to meat, egg, and spices

3.) Place in pan and bake for 35-40 minutes

There is a sauce on the website, I just added some ketchup 🙂

Question for you:

Meatloaf, like or dislike?

Today’s winner: Dinner

A lot of my blog friends, have a What I Ate Wednesday. Well I picked Thursday instead haha 😉

Breakfast: Oatmeal Pancake w/ bananas, PB, and agave nectar on top

Snack: Cucumbers, carrots, hummus, and grapes

Snack #2: Peanut butter filled pretzels (while watching Ellen and reading blogs. I’m a muli-tasker, what can I say? haha)

(notice dirty sock and orange dart? Neither our mine. Neither of them did I pick up haha)

Snack #3: Colby cheese and apple slices (obviously I ate lunch in 3 parts today haha)

Dinner: The winner of the evening Barbeque!!!! This was our first time grilling since last summer!! (the horror!)

We had hamburgers, sweet potato fries, and watermelon. It is starting to feel like summer! (along with the 95 degree weather- YUCK)

(3 plates you might ask? My mom came over to eat with us, since my dad is out of town)

Dessert: Good o’ ted drews 🙂

(huge ice cream. saving the other 1/2 for tomorrow)

Question for you:

What is something new/different that you ate/drink today?

What is your favorite snack?

Doing a body good

The day started out with pumpkin pancakes with Andrew

After getting him to school, I was first going to go on a run. But I wasnt feeling it. And then I thought BIKE RIDE! I was SO excited! I couldnt wait!

The bike ride was AMAZING. I really zone out and have a good amount of time to just BE. and I get a lot sorted out in my head. Some people get that when they run. I zone out and do a lot of thinking when I swim and run. So I finished 15.5 miles and my butt is killing me haha

Then it was time for groceries! I am reading about the Paleo diet (basically just eating natural food)

look at all the colors!!!

How does it look? I know the bread isn’t Paleo, but were taking it one day at a time.haha Notice the lego books- those will be from santa haha

It was already 11, so I needed a snack ASAP

cucumbers, peppers, and carrots w/ some hummus

notice my roadID? I love it- wore it all day haha

Update on Andrew: So we went to the doctor again today.

They looked again in ever facial opening possible! He has a bump on his forehead where there use to be a bruise. His ears are feeling full, but they look perfect. they did a hearing test and past w/ flying colors.

Reflexes were checked. He had to stick his tongue out. So he checked out just fine. I think they diagnosed him w/ an active imagination. But Im not sold on that.

I also had someone ask how school and home were going, because sometimes if they are having problems there, then they can show physical signs.

I plan on emailing his teacher, but after several conversations today, school seems just fine. And home really hasnt changed. So Im stumped.

The plan: just keep an eye on him, and if he doesnt get better by thursday we will probably have to see a neurologist. 😦

Question for you:

Do you zone out when you work out?

What is your favorite veggie?

-Mine would be peppers. You can do so much with them!

crazy for veggies?

This morning started with the Last of the red and blue pancakes

perfect bite

After crying over the last eating the pancake, and realizing it was already 90 degrees at 930 and canceling our bike ride. I made a trip to my second home. Home Depot.

I bought some new stepping stones to fill in the walk way. My next project!

This is what it looked liked before

After getting rid of a ton some weeds, it looks like this

after pictures to come……..

Then after sweating, just by moving the new bricks. I took a break with two cookies and a trip to the pool!

My son and I needed some together time, and we had a blast playing with the beach ball. After two hours at the pool and many cocoa almonds consumed it was time for some real food……in the form of a smoothie!p>

What do you think of the new hair cut?? I cut off two inches, and I miss it 😦

Unfortuantly this smoothie didnt get finished. The yogurt I put in (left over from work yesterday) had cinnamon in it, and DID. NOT. TASSTE. good at ALL! So it got pitched 😦

I hate wasting food. So I ate some cool whip cake instead.

Then it was time for YOGA!! It wasn’t that hard this week (a lot of newbies) but it was an awesome stretch and time to DEstress.

I have been having a lot of stress lately, and I found that the past few weeks that I have been going to yoga, I find that I am a much happier person. (now I just need to work on getting rid of this weight!!!! Its amazing how a number on the scale and tight clothes can make you unhappy! and I hate it!!)

ANyway, after yoga I was CRAVING veggies. This. NEVVVVVERR happens. But I listened!

I had sweet potato fries, cucumber, spinach and a leftover hamburger. Also a side of ketchup haha. I didnt even want to put my hamburger on a bun!! I love carbs…I guess I just enough of them earlier in the day

And a pedicure!

Now Im going to bed, and I will hopefully be getting up early for a bike ride! good night!

Question for you:

What is something that stresses you out?

Do you stress about the number on a scale?
