New recipe + Elf 4 Health

After a 12 hour shift, a trip to the gym, and a small dinner, I needed something sweet. I googled paleo cake desserts. I first found this cookie dough in a mug (I swear this is for another day!)

When I found the pumpkin cake, I knew I found a winner!! And it was really easy

PALEO PUMPKIN CAKE

Ingredients:

  • 3 tbsp of coconut flour
  • 2 tbsp of butter
  • 1 egg
  • 3 tbsp of pumpkin puree
  • 1/2 tsp cinnamon
  • 1/2 tsp of ground nutmeg
  • 2 tbs of honey
  • 1/2 tsp of baking powder

Directions:

  1. Place wet ingredients in mug, then dry ingredients.
  2. Mix!
  3. Heat in the microwave for 2 minutes
  4. Let cool and Enjoy 🙂

New recipe: protein almond pancake

I know i have been trying lots of new recipes,  and this one isn’t THAT different that than the banana pancake. But I basically woke up one morning WITHOUT BANANAS!!! It was a disaster haha

So I tried googling or just looking for a new recipe to try. I gave up, and made my own.

And this one is REALLY good and keeps me full for almost 5 hours!

Protein Almond Pancake

Ingredients:

-2 eggs

-1 scoop vanilla protein powder

-1/2 cup pumpkin

-2 tbsp almond flour

-1 tbsp cinnamon

-1 tsp baking powder

-1 tbsp olive oil

Directions:

-Mix all ingredients (except oil)

-Place skillet on medium heat

-Spray or place olive oil in skillet to heat up

-Place ingredients in skillet in shape of a pancake

-Flip after top starts to bubble

-Cook other side

-TOP AND ENJOY!

I top mine with butter and a little almond butter. But the toppings are endless, like a banana if I had one! haha

Weather, boys, and food

Sorry I have taken a few days off. It has been a stressful week. I haven’t been sleeping

and I am now not going to Kansas with Mr Flowers (long sad story)

Anyway, I started the day with a warm breakfast: 2 eggs, 1/2 cup pumpkin, cinnamon, 1/2tsp baking powder, and PB2 on top

I then took a short nap before yoga.

It does a body good 🙂

Lunch was simple: meatballs and carrots. With cashews for a snack (and two cookies.eek)

Then this happened!!!

Remember the spring weather on monday??? Nope. Winter is back!

Dinner was pork tenderloin with bacon and a sweet potato

Tomorrow, I’m not expecting to lose any weight. With no sleep, stress, and not the best eating. But, tomorrow is a new day 🙂

Paleo Pumpkin Bread

While the meatloaf was baking in the slow cooker, I wiped up this fast pumpkin bread. It took about 5 minutes!

Paleo Pumpkin Bread

Ingredients:

  • 1 cup almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 tbsp pumpkin spice
  • 1 tbsp cinnamon
  • 1/2 cup pumpkin
  • 2 tbsp honey
  • 1/4 tsp stevia
  • 3 eggs

Directions:

1.) Mix flour, salt, baking soda, and spices

2.) Add pumpkin, honey, stevia, and eggs

3.) Scoop into loaf pan

4.) Bake at 350 for 35-45 min

5.) cool for 1 hour

ENJOY!

Pumpkin pie Oats

Pumpkin Pie Oats

Ingredients:

-1/3 c oats

-1/3 milk

-1/3 c water

-1/2 banana

-1 egg white

-1/3 c pumpkin

-cinnamon and pumpkin pie spice

-toppings: cranraisins, granola, agave nectar, peanut butter

Directions:

-Heat oats, milk, and water on stove top till it boils. Then lower heat and add remaining ingredients. Had goodies to the top and enjoy!

I hope everyone had a Happy Halloween!

Ours was very low key until it was time to trick or treat!

My son’s halloween costume turned out PERFECT!

Well it all started with a box…..
 

After a little red spray paint, yogurt cup tops, and glue, the box finally came together and turned into a LEGO!!!

 the glue was used to write lego on the yogurt containers, and then spray paint on top when it was dry.

  It turned out to be a really good night w/ perfect weather

We went to visit family, and ran into my uncle. Who loves halloween (as well as my mom and me) He is the scary guy in the cage- that Andrew didnt want to go by. Imagine that!

 I love halloween decorations, so when I saw this house I was so impressed!

Each one was a different color light, and they are made out of foam, can you believe that?!?!

 I will say. I would much rather carve a REAL pumpkin. But they were still very impressive

 I got home with some candy and a very tired Lego

I know some of you also remember the brown dress I was looking for, while I was a hamburger. It didn’t turn out as planned, but I still thought I was pretty original

 

 

Sorry its blurry. But around the middle, I had dark fabric for the hamburger and fabric to make lettuce, cheese, and a tomato. I then had a necklace that had a mcdonalds container and french fries. David was robin hood.

Pumpkin Spice Coffee

This morning I was CRAVING another pumpkin spice latte from Starbucks. But my wallet wasn’t having it. So I decided to make my own!!!


Of course, every “first” recipe in the kitchen starts with a google search.

I found a lot of great recipes, but just made a few changes.

Pumpkin Spice Latte

Ingredients:

– 1/4 c coffee (or 1 shot of espresso)

– 1 c warm milk

– 1/4 cup canned pumpkin

– 1-2 tbsp coffeemate pumpkin spice

– 2-4 tbsp cool whip

optional: pumpkin spice, or make your own pumpkin spice syrup

Directions:

– Make coffee

– Heat milk in microwave

– Add both to coffee cup. Then add canned pumpkin, coffeemate, and top with cool whip.

ENJOY!

 

Pumpkin and Banana

On Sunday, I made two new recipes. I love how I have more time on Sundays!

P and B pancakes

Ingredients:

-1 bananas

-1 egg

-dash soy milk

-1 c pancake mix

– 1/2 c pancake

– cinnamon

Directions:

Mash the bananas

Add egg and dash of milk and mix

Add pancake mix and pumpkin

Then its time to bake…..

enjoy!

of course the Picky Eater said he didn’t like them

proof it ate it all! haha

then it was time for the next recipe (basically because I wanted to use all the pumpkin up!)

P and B bread

ingredients:

-2 bananas

– 1 1/2 c pumpkin

– 1/2 c brown sugar

– 2 eggs

– 2 1/2 c oats

– 1 c flour

– 2 tsp baking powder

– cinnamon

Directions:

I just mixed all the ingredients together at the same time (I was running late on time)

they are delicious! Next time would only had one egg

Pumpkin Oat Pancake

Pumpkin Oat Pancakes:

Ingredients:

1/2 c oats

1 egg

1/4 cup pumpkin

splash of soy milk

cinnamon (to taste)

Toppings:

Peanut butter

banana (or any fruit)

agave nectar (syrup and honey would work too!)

Directions:

  • 1.)  Mix all ingredients in a bowl

 

  • 2.) Spray small skillet  and heat on medium to high heat
  • 3.) Spread mixture evenly on skillet
  • 4.) once brown on one side, FLIP!
  • 5.) Gather toppings (I love PB, banana, and agave nectar)

 

  • ENJOY!

Hollie’s “Krissy Nutcakes” (named after me, Im just THAT lucky haha), blueberry banana pancakes, sprinkle pancakes, Chocolate protein pancakes, pumpkin pancakes, and heart pancakes. It may SEEEMMM that im obsessed with pancakes….Im ok with that. haha

But the pumpkin oat pancake is one of my favorites!
